Just found your channel and I’m excited to see you’re in my region! So many channels like this are in other areas where stores and prices are both massively different. They also often lean heavily into dairy and wheat which can be challenging. I don’t mind making supplements, but especially when talking about price it gets tiring to be told “make up all your grains with wheat and your calories with dairy” which can drastically change the price

Just made this and definitely will again! Breadcrumbs take it to the next level and there is a great pasta to sauce ratio. Even my partner who is more a meat and potatoes person loved it!

I love butternut pasta sauce. I also add a little diced bacon and diced tomatoes.

I made this today and it was absolutely amazing, both me and my husband loved it. Used regular rigatoni of the same brand instead of gf just because they didn't have a gf version at our grocery store. Delicious 😋 The sauce, the bread crumbs and the herbs, it all came together. Thank you for a great recipe - officially feels like the start of the fall 🍁

For a nut free take: Butternut Squash Crispy Mac and “Cheese” 1 lb. large elbows, cooked 2 min. less than “al dente” directions, reserving some pasta water 1 butternut squash EVOO 2 c plant milk 1 c reserved pasta water turmeric 1 t ground mustard 1 t smoked paprika onion powder garlic powder 4 cloves minced garlic 2 T cornstarch 4 shakes red pepper flakes ground nutmeg salt freshly ground black pepper ½ c nutritional yeast 2 c panko Microwave squash for 2 to 3 min., so it is easier to cut. Halve the squash and remove seeds and pulp. Brush surface of squash with oil and place on a baking sheet and bake in a 350oF oven for an hour or a bit longer until browned and tender. Let cool. Scoop squash from skin and place in a tall pot or blender. Add to tall pot all remaining ingredients except panko and puree with stick blender or a regular blender to make the sauce. Taste and adjust seasoning. Place elbows in oiled 9” x 13” baking dish. Add sauce and stir well to combine. In a bowl, combine panko with some salt and pepper and add some oil and stir to mix. Add to top of pasta. Place baking dish on a baking sheet and bake at 350oF for 30 min. until bubbly and browned.

yes!! you can freeze separately for up to a month

That looks really good, I made your turkey/curry meatballs and I believe a tomato rice recipe from you also. It was VERY good so I would def give this one a go. I wonder would if be weird if you added cottage cheese to the blender for added protein?

@@allisonmiller7564 you could definitely do that!! I have done a similar recipe with cottage cheese that I have on my site - creamy roasted red pepper sauce!

I love your channel! But that was way too much camera angle changing and it was very distracting, maybe I’m just getting old but it could be a little much for photo sensitive viewers. Just some constructive feedback, keep making videos we love them!
