I don't get how Emmet always gets hits and even single note lines from the soloists such as at 1:23 . Its just mind blowing and he does it in almost every solo he is comping!

Comping involves listening and responding to the soloist. Not really all that uncommon.

That's indeed pretty sick. But obviously in this case bar 80 is reinforcing the idea that came in bar 78. If you know the changes you can kinda anticipate bar 80 from bar 78 and the pickup from bar 79, as it is the natural contour of the phrase.
