Greetings @Jerene and thanks for your very easy going style, well instructed, logical, informative tutorial. I lived in Jamaica in the late 80s and waited most days for the cocobread mon to ride his bike to my yard so I could buy his callaloo stuffed cocobread. And I have missed this yummy food ever since no matter what part of the world I was in! Recently, thanks to the internet, I learned that callaloo is known as "amaranth. And in the part of South America where I now live, we call this leafy green " klaroen", which available at all local open fresh food markets along with plants that can be grown at home" Funny enough, mIve bought and prepared klaroen countless times but never did it dawn on me that I was eating callaloo! So now, that I have sourced callaloo it's only a matter of days before I plan a cocbread baking day once I pick up a bunch of fresh greens from the market! So excited. I know thanks to your video, preparing the dough and filling will be a breeze! This project is not only for myself for all nostalgic reasons but also for women's economic development. Cocobread is something not sold here and since klaroen is very popular, a veggie staple in fact, it should be a hit. But I'm also considering Jamaican patties (chicken, beef, vegetarian, soya mince). About 75% of the local population is of Hindustani origin so they are either vegetarian or they will eat chicken or fish but not don't eat beef. Would you happen to have a tutorial on how to prepare traditional Jamaican patties? Maybe also with substitute fillings? Since locals here cook to some degree with Caribbean flavors, like curries, I believe Jamaican patties will also be a flavorful hit. An especially since no one is making them they will be a source of income that arrives without competition. As long as the recipe is great! As I stated above, your instructional style is fool-proof and comprehensive. Any further tutorial/advise you can provide will be appreciated. You're a ⭐️
