Lucky Jess to have hash brown casserole ! We usually only have it at Easter or when we have ham. I think we have to start making it more often. Delicious. It goes by a different name for us: "cheesy potatoes".

I have added cubed ham before, and other times I add some chopped jalapeños from the jar. Not too many just enough to give it flavor. There’s so many ways to change it up

This looks so good! I’m going to have to try it, since I have Nonnie’s cookbook. I think I might sauté the raw onion before adding, just to make sure it’s good and cooked, since my husband is big baby when it comes to raw or undercooked onion. Don’t tell him I said so though. 🤫😜😂

Jess is so good when she's concentrating on cooking. All her 'go to' everyday phrases are on the back burner - excuse the pun! - and she's really inquisitive, too. I should take a leaf out of Jessica's book, and be more productive! 😀

Hi Janet. Jess doesn't like getting sick, which is typical of most people. She does get frustrated with being sick because it keeps her from going places and having the abundance of energy that she usually has. Overall, I think she handles it fairly well.

It is possible with some words, but I think it all relates to her autism and he vision impairment and the way she has learned throughout her life.
