Jhal suji or nonta suji recipe: This is a Bengali take on the widely known upma or savoury semolina snack that is eaten all over India in one form or the other. "Jhal suji" is simply savoury or spicy suji. This is to differentiate it from the "mishti suji" or sweet semolina preparations. This recipe is perfect as an evening snack or even as packed school lunch, AKA tiffin for kids.
What makes a great jhal suji? It is fluffy and not lumpy. The end product should look like wet sand with separate grains glistening with ghee. Yet, it is perfectly soft and moist, and should not feel dry when eating.
This can be achieved by paying attention to two things-first, there has to be enough fat to coat the semolina grains. This keeps them separate and prevents clumps. Second, the proportion of semolina to water has to be such that it cooks the semolina to perfect softness, but there is no extra water leftover.
Apart from these two (in our opinion) desirable characteristics, how you flavour your jhal suji, or what vegetables you put in it, is entirely up to you. Decisions such as whether to put onions, ginger, garlic, the choice of nuts and dried fruits, or the vegetables depends on the season, or what you like. The idea is to add different textures that break the monotony of the semolina, while also providing flavours and nutrition.

In Maharashtra, we call this Sanza. Though we dont use dry fruits or any whole spices like dalchini, elaichi, tejpatta. Makes for a hearty light dinner in winters with addition of peas.

@@MR-ml5ij Upma is white and it does not have whole garam masala or garlic. Upma has a very distinct taste. And it has particular veggies only like onion, carrots, peas and at times fried cashew. And urad dal is a must in the tadka.

Thanks a ton for posting this, this brings back memories of a scout guide camp that we had in Panchgani when I was in school. The cook made this lovely dish (I thought it was a kind of upma) with mugfuls of lemongrass chai for us and packed luchis with aloo sabzi for the trip back home... little did I know that I was introduced to Bengali cuisine!! Back home I kept pestering my Malayali mother to recreate the same - the poor thing ended up putting turmeric in upma:)

Tried this today. And I want to say I couldn’t imagine that it’s so delicious. The toasted semolina flavor and texture is way better then couscous (though it depends on cooking method I guess)

I loved the jhal Sooji my mother used to make when I was young.... Was missing it so much recently.... So my one stop is bong eats and found this recipe and cooked it today. In Karnataka households uppittu(upma) is preferred with sandy texture. We use less oil than bong version but add coconut. Only in hotels do they make it more moist.

ছোট্ট একটা suggestion: জলটা একবারে না ঢেলে, একটু একটু করে হাতে নিয়ে ছিটিয়ে আর নাড়াচাড়া করে রান্না করলে যেটুকু দলা দেখছি, সেটাও হবেনা। একদমই ঝরঝরে হবে।

Hi folks. In the south this is called Upma. There are various ways of making Upma. Across the four states that is - Kerala, Tamilnadu, Andhra and Karnataka. It's a favourite an all time breakfast dish or had as dinner. The variants are so many to list though. My favourite is a simple one made in coconut oil and garnished with coconut as well. Upma is made with broken wheat, vermicelli as well as broken rice. Can you give the measured quantities of spices in terms of tsp and tbs (teaspoons and table spoons) while for the vegetables in terms of size and numbers....like one medium sized tomato rather than 40gms tomato. Very few kitchens use a electronic precise balance.....Anyway you guys are doing great job.....it was a suggestion to improve your style of presentation

Upma with some spices. Its very oily 🙄 otherwise its good 🤗. , can you tell me how many glass of water and sooji instead of mentioning it in gms.

I don't know about glasses, as it is not a standard measurement. But it is easy enough to type into your search engine "265 gms of water in cups" and you get 1.12 US cups.

Its Upma.. You have made it so fancy..otherwise its simply cooked with onion, peanuts and cherry leaves in Maharashtra.. Served with coconut chutney... Its a wholesome breakfast for students

A great share. I end up making a soft lump which no one likes to have. Didnt know the tips n' tricks of a fluffy 'jhal sooji'. Now i'll have one more choice of tiffin/snacks for my family.

Thank you so much for this delicious recipe. I have tried this at home and all my family members were awestruck when they tasted. As they only know about the upma and sweet taste of sooji. Whenever I feel hungry I used to make it anytime 😋😋

আমি আজ বানালাম খুব তাড়াহুড়ো তেই, তাও খেতে খুব সুন্দর হয়েছিল! ওই আদা র রসুন এর কুচি তে একটা আলাদা ই ফ্লেভার এসেছিল যেটা দারুন লাগছিল বাট রসুন দিয়ে যে এত ভালো হবে সুজি তে আমি সত্যি আশা করিনি😍
