Im never satisfied with the consistency of my homemade cornbread. I tried this recipe and it is delicious this will be the only way I will be making my cornbread now. My eighty-year-old mother I cook for is totally in love what the cornbread I made from this recipe. It was a hit.

@@LifewithSammysTreasure well you added sugar so that defeat the purpose of syrup. In the old days, the leftover cornbread is eaten in the morning with syrup. For lunch it is mixed in a glass of buttermilk and for dinner it is mixed with pot liquor. Cornbread and a piece of fatback would get is through the day. This is basically what Black baby boomers and southern Gen X ate 40 to 60 years ago. I see people now trying to make it soft and fluffy like a cake, but that's not cornbread. That's a cake.

I don't know Princess. jiffy already sweet. I think you just made cornbread cake. never been a fan of jiffy probably because my mother made cornbread from scratch. I know you in the us now but Afrika is not in the same health predicament as AA's. We sufferin from too many diseases- many self inflicted. dialysis is a profit making industry now. no disrespect. not only do We have to de-colonize and de-westernize Our minds, like Tupac said, We have to change the way We eat. Binta, if you are Muslim, you have to be careful of Jiffy. It contains"lard" which is a pork product. They recently have formulated a vegetarian (no lard) version....watch the labels my sis ❤ P.S. Cornbread is GREAT with collard greens, cabbage...so its prrobably good with other leaves...i.e. plassas

LOL, Sammy eating corn bread. Cornbread is not meant to be soft and moist like cake. It's kinda like kenkey in contrast to fufu. It is dry but we eat it with greens or cabbage with our hands... so it is traditionally use to sop up the juice of greens. Cornbread can be eateb by itself as a meal if you add it to a saucer with some steaming hot pot liquor, glass of cold buttermilk or top it with some sweet sticky syrup for a morning treat. However making cornbread from a jiffy box is like making fufu from a box. It is unacceptable. Cornbread is meant to be made from scratch.

I disagree It’s not like fufu where some people make it from fresh pounded ingredients... cornbread is rarely made from fresh pounded corn or fresher handled ingredients. I agree the “countrier” and more southern you are the firmer and grittier your recipe may call for traditionally due to all the reasons listed.
