Jiffy mix (1 box) 1 egg, half & half (didn't have milk) dollop of H2O and squirt of sour cream...trying off your recipe...here is the kicker added about 3 table spoons of this 100% Agave Syrup and 3 table spoons organic cane sugar! It is delicious but if I keep eating it I’m going to grow 2 sizes. I’m not mad at it though. I love me some butter. Hi, Tashonda! That cornbread looks great. I agree that Jiffy cornbread definitely has a bad reputation, but adding buttermilk, sour cream, and extra sugar would definitely help it. Making it in a greased cast iron skillet and not a casserole dish is another good idea. Thanks for sharing!

Scrolling through the comments to see if anyone actually added creamed corn to the recipe. Couldn't find any. My hubs likes corn in his cornbread, says it's not cornbread without it. I drained a can of creamed corn as much as I could . Then after the batter was put into the dish. I added the corn on top. I used half n half instead of buttermilk. It's in the oven. Can't wait to see how it works out.

I heat up my cast iron 400 deg..then butter it..n wit these ingredients . But i use half stick butter.n 1/ 3 c.lite bwn sug ..n no top coating..saves sum calories n taste great EVERYTIME. .

I just made this and let me tell you I was blown away, I never thought Jiffy could taste this good especially without hardly any extra effort! it was soft and sweet, but the cast iron and salted butter gave the top and bottom a delicious salty crust. It is moist, light, and crumbly all at the same time. this is gonna be my go-to cornbread recipe from now on, and I think I'm gonna try your cream cheese poundcake next! Thank you!!!

I followed your recipe, but made the following changes. I used a 9x13 metal baking dish, like you would use for brownies. I substituted buttermilk for half and half, because had some in the fridge. I added a can of drained corn. Baked it at 375 for about 26 minutes. It came out great!

I think you meant to say: you substituted half n half for the buttermilk? you can make buttermilk by adding a couple teaspoons of FRESH lemon juice OR a tablespoon of any kind of vinegar to your milk or half n half and let it sit a couple minutes.
