I used this recipe and LOVED IT!! The only difference is I used Jiffy's "honey" mix and I added a drop of liquid vanilla flavoring. I like my cornbread to taste like cake and it did not disappoint :)

Hi, Tashonda! That cornbread looks great. I agree that Jiffy cornbread definitely has a bad reputation, but adding buttermilk, sour cream, and extra sugar would definitely help it. Making it in a greased cast iron skillet and not a casserole dish is another good idea. Thanks for sharing!

Scrolling through the comments to see if anyone actually added creamed corn to the recipe. Couldn't find any. My hubs likes corn in his cornbread, says it's not cornbread without it. I drained a can of creamed corn as much as I could . Then after the batter was put into the dish. I added the corn on top. I used half n half instead of buttermilk. It's in the oven. Can't wait to see how it works out.

Jiffy mix (1 box) 1 egg, half & half (didn't have milk) dollop of H2O and squirt of sour cream...trying off your recipe...here is the kicker added about 3 table spoons of this 100% Agave Syrup and 3 table spoons organic cane sugar! Whisked it and ladled it in to a cupcake pan 3/4 full! I am so happy! Thank you & I just subscribed!🎉❤

I followed your recipe, but made the following changes. I used a 9x13 metal baking dish, like you would use for brownies. I substituted buttermilk for half and half, because had some in the fridge. I added a can of drained corn. Baked it at 375 for about 26 minutes. It came out great!

I think you meant to say: you substituted half n half for the buttermilk? you can make buttermilk by adding a couple teaspoons of FRESH lemon juice OR a tablespoon of any kind of vinegar to your milk or half n half and let it sit a couple minutes.

Girl, I'm watching this till you dump that 1/3 cup of sugar in - I said wait a minute - I jump up and go grab a box of jiffy mix from the cupboard and look at the back of the box. Let me see if I got the math right: 15 grams of sugar added PER SERVING. That's 3 servings per box, then two boxes. 90 grams of sugar ALREADY in the boxes and THEN you add 1/3 cup! My Lord, can you say Sugar Coma :) I'm not hating on this or clicking dislike, cause I'm sure you are a good cook and this recipe tastes heavenly, but I ain't in that big a hurry to get to heaven :)
