I bow on and off the mat as a sign of respect for the mat and the people who train on it. Not that the mat is somehow a mystical or sacred thing, more to remind myself of my special appreciation for the training space, the history of the sport and the efforts and dedication of those who train. The bow also serves as a mental cue to set aside everything else going on in my life and focus for one hour on BJJ, all the other stuff will be right where I left in when I bow back off the mat. Also, If I ever have BO, long nails, or bad breath on the mat someone please tell me so that I can correct it.

I really like your perspective on bowing, I think having a little rituals to set yourself to be in the proper mindset for Jiu-Jitsu or any other difficult focus intense class is super important. For me tying the belt and stepping into the foot bath then on the mats puts me in a different mindset where I am ready to learn and be focused on class. It's a little things, but they add up.
