Nice job Joel. I went to a 'Red Lobster' in (Medford Or.) and ordered a 1 1/2 lb lobster ($35.00) and the waitress asked if I wanted HER to crack it open and all. "Are you crazy...I'm from R.I." .....Too funny...I don't think she ever saw a Yankee eat a whole lobster before..."hide, hair & eyeballs". I even took the shell home for lobster bisque stock....never waste anything...cheers!

Yeah, at my local place here in CT, they always ask if I want the kitchen to start it for me. I can do most of it with my hand and a few napkins, and perhaps a rock, even. ;-) I go into parts that even the kitchen tosses. That's disrespectful to the animal. I eat what I can, except I don't like coral (on female lobsters), and I don't like tomalley straight up, but it's fine in bisque for flavouring. Love the video, and enjoy the heavy maritime accent. Being originally from the Mid-Atlantic, I'm used to the cousin accents of NYC; however, I remember the non-regional Mid-A accent of the movies, too, and how some of my relatives spoke.

The extra meat is about 1/4 the total meat. It's worth going after it. I always do. Most people, and places, toss it away. On a $20 lobster, that's like tossing $5 away. And altogether it's a hefty chunk of meat. Thank you for showing people how to get at it!

It's surprising how many people waste so much of the meat when they order a lobster, so much of it isn't removed/eaten. A real waste of your money. Thank you for the tutorial.
