If it has grease that's country gravy which tastes nothing like a quality gravy. the gravy that quality restaurants use is broth, not fat or grease. I toast the flour until it's golden brown then i mix it with broth in a pan over medium heat and stir until it reaches a good consistency. depending on what it's being served with a hint of butter can also be added to the gravy. like for instance chicken and rice with a thin gravy.
