Thanks for the video! It was super sweet of you to try to recapture a memory you cherish for your friend. I'm a baker and noticed a few things, but feel free to disregard them! First, good on you for using cake flour, but sifting it twice first will make your batter lighter and easier to work with. Also a good rule of thumb for any cake that's using whipped egg whites to help leaven it, is to not open the oven until they're completely done baking if you can help it. This shouldn't be a problem since there's so much baking powder in there too, but just something to keep in mind. Simple syrup is fine to omit since yellow cake tends to be more moist than a sponge cake and would only serve to protect the whipped cream from mixing with other components in this case. I also think this cake would do better with an italian meringue buttercream for what I think you're trying to achieve here than the white chocolate whipped cream, whipped cream also won't adhere into a thin layer well as a crumb coat and really just works best spread solo. If you have extra whipped cream and are worried about it going to waste, you can freeze them in dollops on a sheet tray and then thaw them later to top desserts or use in coffee. Those are also somewhat shallow cake pans which makes it very hard to cut a cake that moist in half, I usually use a much taller pan when I'm going to cut cakes into sections or just use a sheet tray and cut out rounds with pastry rings. Again, just some tips, you're doing great thinking on your feet and should be proud, keep on caking!

Thank you so so much for all of your helpful tips! Im writing notes 🤓 I never tried making an Italian meringue buttercream but I always wanted to try! This comment was the perfect push to have me attempt next time! Thanks again. :)

The frosting that was used might be an italian meringue buttercream- its supposedly used by big bakeries and the like because in addition to being stable, it holds up well in hot weather ❤️

When you cut a cake in half it is better to put the knife a little way in and then tun the cake, with each turn cut deeper into the cake, it will split in two easier. You will get a smoother cut, and no ridges.

This cake reminds me of the classic Danish birthday layer cake which is vanilla custard and strawberries/starwberry jam between layers and then piped whipped cream (no added sugar or chocolate) with strawberries and little Danish flags for decoration 🇩🇰 I bet your version tasted amazing and such a sweet memory to connect it to
