i’m making this for the second time now and i figured it was probably a good opportunity to lavish praise upon this recipe. it’s utterly delightful in concept, extremely fun to make (the pastry cream is my favorite part, of course) and completely delicious. i was dubious about the chocolate ganache but it brings a beautiful slight bitterness to balance the sweetness of the fillings. this is so good and if you haven’t made it yet this is your sign to go for it

Hello, I know that It's been a while since this recipe was uploaded.. but I can't find a dijon mustard anywhere, maybe there is something it can be replaced with?.. But the recipe is great and looks delicious!

Sorry for the late reply! You can just not include the mustard as its optional. Most tamago sandos dont have it but I just like to include it because I like mustard haha.

Maybe you could try salting the rinds before hand before pickling them? Draw out some of it's moisture and hopefully make them a little softer before giving them a good rinse until they're not too salty anymore. From there you could make a sugar vinegar brine to let them sit in- in a style similar to those radish pickles you get with korean fried chicken! This was a great video and i've made your banana pudding recipe a few times now and my family loves it! Always look forward to your cozy videos. Next on my to-try list would be your perilla leaf kimchi now that it's starting to warm up where I am!

You could still dump one of the jars into a pot and simmer until you get the consistency you want. This will also cause the brine to be absorbed more into the rind. Basically what happens if you were to can it. Rind pickles should have a "medium crunch" but not be hard. But, you can do any texture you want. Start with 1 of the jars (if you still have them) to see if you like it.
