Remember: if anything cooked in oil has a slight fishy aftertaste, it has oxidized, so it's rancid. Not surprised with KFC reusing oil to no end.

Unfortunately the reality is that Josh can afford to spend the time to make each meal/dish way better ***because*** he's doing it himself and has hours to spend. The restaurants have to worry about the logistics of hundreds of pounds of meat and refrigerated transportation and food safety/allergy guidelines, etc. It's just not feasible, that's the *point* of a fast food place. Good enough for the price, at a large, consistent scale.

Actually you hit the nail right on the head. There’s a large chicken chain in England that served KFC chicken and they sued the corporation for changing the recipe and deviating from the Colonel’s vision. Of course he lost because the corporation owns everything so he broke away and now serve chicken with the original recipe because that’s the way the Colonel would’ve wanted it according to the owner.

I'm from Nashville, born and raised, but I moved to this small city close to Kentucky and I've lived there for about 2 years. I miss Hattie B's and Prince's Hot Chicken so much. One location I used to go to all the time literally burned down on a grease fire and the city I live in doesn't even have either restaurant. I like the KFC Nashville Hot chicken, but when you go to Nashville and got to Prince's Hot Chicken or Hattie B's it's a whole new world. I've wanted to make it on my own for such a long time and I always forget, but I think I'll give this recipe a shot. Sometimes when I go to Nashville to visit family I HAVE to go to Prince's Hot Chicken or Hattie B's cause it's literally a staple in my household at this point.

Hey Josh! your food looks amazing, but some valid questions remain, though not in the scope of taste. 1) how much time does it take from end to end for your dishes vs how long you can expect it at the restaurant. 2) how much do your dishes cost compared to the restaurant. id also like to ask you to adjust for portion size differences. im sure yours is more time consuming and more expensive, but of course yours is artisanal and vastly better. but i am curious about the difference. if you could do this, that would be very enlightening, thanks!!

I think you should do but better for foods that aren’t fast food. Maybe try store bought meals/ready made soups (eg. Ready made chicken Thai soup from a supermarket)
