There is so much tacos left to eat, for those who knows you only visit a small zone in the city, most of them nice and tourist neighborhoods, but Gabriela nailed in the agenda. Most of the tacos are influenced by other cities in Mexico, like cochinita who is mainly from Merida. Currently Mexican gastronomy is evolving in many weird ways, like tortas, pizza or burritos with tacos, but there are so many traditional Cuisine that is the real thing beyond tacos.

That is just a rumour that began on social media from a random dude that told that quesadilla ment "Tortilla doblada" in Nahuatl (the word doesn't even exist). Quesadilla doesn't ment "tortilla doblada" or some bullshit like that, Quesadilla came from the Spanish dish named "Quesada" that's just a bread with some CHEESE in it... That's why QUESADILLA always implies that it need to has some form of cheese in it. For all the people that lives in the CDMX and doesn't agree with the rest of the fucking country, just google it. The actual origin from the word and the dish itself came from the previously mentioned dish.

Tacos de conchinita pibil have a special place in my heart. My grandpa enjoyed walking daily for decades and he would get to his favorite spot that only served these tacos. He was such a regular there that he had his own sitting spot and they would serve him his perfect order of tacos de cochinita pibil without ordering. Just sit, smile, and he’d be served. He was also very diabetic and that’s a big no no but no one could tell him otherwise because he wanted to eat his tacos🥲 lol rip papa Nico. Seeing it up there as best lunch taco makes me smile

My problem with this dish is that it's kind of like pulled pork in the US: places that get it right get it great, but 80% of the time, it's so dry, it's basically inedible. Again, not criticizing the dish, just saying it's actually not easy to get right.

Mexican here! There is a debate on going of Mexico City claiming that quesadillas are without cheese VS the other 31 states arguing back that quesadillas MUST have cheese 😅 I once dig into this and both sides have good points. Anyway Joss, you should one day taste tacos in their own home states, like tacos de cochinita pibil in Yucatan, tacos de carnitas in Michoacan, etc. Man, we can make them on other places and still, there is something unique when you eat it at their origin that adds to their taste somehow. The one thing I love about our food is how customized you can make it to your taste, to make it your own. I could eat the same taco as my husband, but each of us will add or avoid certain things according to our taste. For example: I add cilantro and onion, he doesn't I add a lot of lemon and a bit of salsa, he adds little lemon and lot of salsa And so on with most dishes ❤ PS: I drooled seeing all those tacos, I'll definitely visit some of those places next time I visit family in Mexico City
