The mash potato recipe reminded me of a Cuban dish I used to eat all the time. It was the same thing without the cheese and instead of bacon inside, they used ground beef to cover the mash potatoes and it was amazing.

My favorite way to eat leftover mashed potatoes is with cooked spinach. In a pan I put some olive oil and minced garlic. Once the garlic has cooked a bit i throw a bunch of spinach in and once it's cooked down add a little salt. It's also really good with fish.

Nice. Always love to see new ways to use leftovers in something new - definitely never thought of doing a savory dressing waffle. I typically do similar fried mashed potato balls and turn leftover cranberry sauce (from fresh cranberries & citrus) into a spicy sweet and sour sauce for dipping, and always do a turkey & roasted sweet potato & assorted other leftover veggies thai curry on Friday (using some of the fresh stock from the turkey carcass).

I just made the stuffing waffles this morning, topped it with sausage and gravy, and oh my lord........ it was the best breakfast I’ve ever made. I expected it to be good, but it DEFINITELY exceeded my expectations. I think the most important part is the cheese. It adds such a nice comfort food feel.

I made the mashed potato balls. They came out really good. Crispy. Tasty. The last batch of potato balls fell apart in the oil. I took out a nicely browned ball but it was only the crust- the insides were just sizzling away in the oil. Maybe it was the type of potato used. I used Yukon gold. Or maybe it was because my mashed potatoes were still warm when I rolled them. I used Canadian bacon instead of pancetta and I cut them into strips to fry so that when I took them out to cut again - I would be able to hold onto the meat to really finely dice them. These are a keeper!

They sell it in the shakers right next to the regular shredded parmesan. It's 100x better
