I’m 50 years old so I remember when Burger King opened up in St.Louis MO. The Whopper burger was a bit smaller than a dinner plate and each burger was flame grilled to order, there was actual smoke in the air because they fully cooked the fresh meat over open fire grills that you could see. They fixed It exactly how you liked it so it was absolutely delicious and put other burger chains to shame. Now the whopper is the same as any other burger out there, the same thing happened to McDonald’s food. Back in the day it was actually tasty food.

The nodule things you saw on one side of the burger is from the cooking. It's cooked on a flame "char broiler" conveyor belt thing. Those are the juices that kind of congeal and break away from the main burger. You get them on your own burgers if you dont flip them. The act of flipping them gets them off your burger.

I used to be a supervisor at A&W. Believe me, we did everything we physically could to try and make the food decent... but during Covid, upper management made massive price cuts. I'm talking labour percentage of 11-14% and our manager getting written up and screamed at on the phone if it went higher. Any restaurant owner worth their salt will tell you that this is COMPLETELY INSANE. Everyone quit in April, starting with our manager, and including myself, because we were being pushed to work unpaid overtime just in order to keep things up to standard. I was a supervisor and I didn't want anyone getting food poisoning, so I was going in unpaid after hours (in exchange for food that my manager slipped me) trying to clean the place up because having one cook and one cashier on a Friday night means that nobody has time to clean. And my manager came in, unpaid, on CHRISTMAS DAY to clean because that was the only day of the year where there weren't any customers. One day my manager finally went rogue and authorized for a bunch of us to stay late and get paid to deep clean the place (because the HEALTH BOARD told her to), and head office screamed at her over the phone. I heard it. She told them that she needed more labour to get the place up to health board standards, and they punished her for it by cutting our hours even more. After that we all coordinated finding other jobs, and one by one, all quit over the course of a month. If you ever go to an A&W during rush hour and you only see two people working, or if the line is around the building... go somewhere else. If you must go there, try to keep your focus on the popular, standard items that sell quickly, and you'll be more likely to get it fresh. And please... go easy on those kids. They're trying their best out there. I know this video was about BK and not A&W but... I just had to get that out there.

Working in the horeca sector is a stressful job. I loved to cook and from the age of 16 I was working in restaurants. By the age of 22, i fell out of love with cooking. It's a tough job and it'll break you literally and figuratively. That's why when I order something and it takes long, I always go back to the times I worked in a kitchen in my mind and calmly wait for my order to be ready.

@@Everything4Tech Something I forgot to mention was that this is A&W Canada - other countries are entirely separate legal entities. With any luck, if you're in a different country, you MIGHT be okay. When you go to a place, scope out how many people are working and how clean it is. If it looks filthy in there, ESPECIALLY if there's only one cook and only one cashier (or if the cashier is alone and running into the back to help the cook), it's a red flag.

Hey quick note: if the garlic turns cyanide blue over time (like a few days) in that pickle brine it's perfectly normal and still edible. It's a reaction between the chemicals the garlic releases from being bruised with the acidic solution it's sitting in that produces that blue pigmentation.

The high school I went to was right behind a Burger King, when the weather was warm and we had the windows open, all you could smell was the burgers cooking. You don’t know how hungry by lunch time we all were. Burger King was always packed during week days. Even now when I drive past it during the week, you always know what time the school is out for lunch.

When I was younger I hated "mayonnaise" until someone put mayonnaise on my burger accidentally and I said "this isn't mayo" that was when I found out that what my parents called "mayonnaise" was actually "miracle whip", I have liked mayonnaise ever since, nor have I forgiven my parents for their lie all those years, lol :)

There’s no comparison, any homemade anything will beat any fast food item! You made the buns, Mayo, pickles and grind your own beef, seasoned all the ingredients, fast food doesn’t even salt theirs. Even if you did not take the extra steps and made the burger with store bought items (buns, Mayo, pickles and ground beef) it would have been 100%better.

I worked at BK for 3 1/2 years and I will say that if the whopper meat is fresh off the broiler and the add ons are adjusted to your liking, the Whopper can be a decent choice. I will also say that I absolutely hated working there and had many break downs in the walk in freezer while doing inventory. I can only dream of trying this recipe for myself but I am positive that you de-crowned the King

Just for reference, BK doesn't use mayo, they use whopper sauce which is a mayo-based spread. Not far off, but it does taste a lot better than standard mayo. It has stuff like Cayenne, Pickle Juice, etc.

5:25 That's salivary amylase, specifically. Amylase is largely produced by the pancreas, and when the pancreas is injured, some of that amylase will go into the blood. Amylase levels in your plasma/serum can be tested and is useful in assisting in the diagnosis of pancreatitis (but outdated thanks to lipase being a better and more indicative test). :)

The reason amylase is outdated as an indicator for pancreatitis is that it is not specific to the pancreas, as lipase is. Amylase is released by the salivary glands to start the conversion of long, more complex sugar chains into shorter chains that we taste as sweetness. Because pancreatitis is treated mostly with empiric pain medication, people could pretend to have pancreatitis by rubbing the angle of jaw and... abracadabra, elevated amylase -> treat with morphine.

I made this as I'm a fan of BK but hardly ever eat them and fancied a 'treat'. I didnt make the bun and I didn't charcoal grill my burger or make my own mayo ( Hellmans ) also used pickled gherkins from a jar. The result was a super juicy and flavoursome burger and no question your burger beats BK, even mine was definitely much tastier. It didnt take long to make from start to finish maybe 20 minutes and not much mess to clean up. It is worth the effort to follow your full recipe if you have time to do it and my burger cost about £3 for the ingredients as I used a 1/2 lb of beef. Thanks for your help. I will be making this again and will try some of your other recipes. You clearly know how to cook and your videos are snappy.

Hey, that Burger King in particular is a god send. During the Houston freeze last winter I waited 2 1/2 hours in the drive-thru to get a couple whopper meals because they were the only place open in a 5 mile radius of my house. Best meal I’ve had in my entire life.

I love this series, but I am not sure if this has been brought up before, but it would be interesting to see if Josh is doing this while also utilizing the same profit margin as the name brand. It doesn't surprise me that he is able to make every item with better quality, but what if you had to produce the item for the same profit margin that Mcdonalds, Burger King, etc had to?

Yeah, it's WAY easy to beat a fast food burger when you spend half the day making buns, dill pickles, sauces from scratch. The entire point of fast food is FAST.

Amylase is also an enzyme you can use in beer making! If you add it to the mash (your grain and hot water steep step) then you’ll be able to extract more sugar from the grain starches. There is an enzyme called amyloglucosidase that you can add in the mash^ and also while fermenting because it can also convert complex sugars into simple ones that the yeast can utilize. Cool to see more food science on the channel!

I want to see you do these “But Better” videos in other countries, because by the looks of it, here in Australia, our Wopper’s at Hungry Jack’s (it’s not call Burger King here for legal issues or something idk) are pretty decent, and the Ultimate Double Wopper; though a bit pricy, is huge and is really good.

Maybe not the best presentation, but still BK is my fave fast food when it comes to burgers below 10€. At least in Spain, their lettuce and tomatoes actually taste what they suppose to taste, not like MC lmao. Anyway, this whopper at home looks amazing and easy enough to try and make my own ~

Josh you have my deepest respect as a KZbin chef. You definitely are talented and have skill I wish I had. But, I am sure you are aware, fast food and restaurants are different, one is built for convenience and one is built for quality. What you are making is gourmet fast food. This is stuff they serve at restaurants. Please don't hate on fasts food so much that it is disgusting to the common people. They are not bad in their own scale. Thanks for the vids

That's why it is called "but better" not "but like the original". The goal literally is to make a better version of the original regardless of time and cost. For that there is the "but cheaper" segment. And to be fair no matter how you look (timewise, quality wise or price) at it, the original really looks bad and super processed (the patty alone). It is what it is and all the power to those who want exactly that but it is bad.

That whopper deserved to be dissed for not even looking like the ones in BB’s ads. That’s the least we should get. Mr. T is correct - Josh isn’t saying BK’s whoppers should be like his. This series is about his improvements on the popular foods, regardless of the source, though it’s often fast food, take out =, and chain restaurants He even finds ways to copy the popular features of the contenders, like the soft texture of the buns in this case. My inner sloth insists there’s no way we’re going through the trouble of obtaining two specialized ingredients to make hamburger buns, BUT I really like soft bread, especially on my burgers. Bother.

Which can be a fair point. Depending on how you look at it. Not for me though. I don't know how it generally fares in the us but in Berlin i get a very decent freshly made burger for the same price in a restaurant and it also takes like 20 minutes from ordering to being on the table. All in all it's maybe just Josh complaining because that's what he does and also it is good entertainment. Sure he should be respectful to the people working there which I think he is but towards the company itself? No fucking way. It's a ruthless company serving super bad food for high prices and misleading advertising. Nothing to like about it at all.

when making mayo i highly recommend using kerrygold butter or animal fat in place of vegetable oil*. (makes for a healthier tastier mayo) *if you have seen how vegetable oil is processed, you wouldn't want the rancid & scent removed oil in your body

A great practical joke would be to take a regular customer that orders a whopper at a Burger King and instead give him this masterpiece that Josh has just cooked right out back in a food truck and using a charcoal grill in a fenced area behind the store. Then note the customer's reaction. "This seems a lot better than usual!"

Exactly, KZbin keeps showing me these in recommendations. Is good content and knowledgeable. But is basically taking a 14 year old kid and putting them against a 20 year martial arts vet in a fight. It is an easy win and easy content. I love burger king, reminds me of moments with my mom as a kid. Same with how enjoying a sausage mc griddle reminds me of saturday mornings with my dad. Its not the quailty its the memories that keep me coming back. Thankfully I am very big on eating at home so definitely dont eat fast food for 90% of your weekly food in take if you can avoid it.

Feel like you are entirely missing the point of the video. He takes a popular fast food item and makes it better. Hes not saying "this is how Burger King burgers should be" hes saying "I'm gonna make something like a Burger King burger but better and show you how to do it" hes challenging himself to make fast food better - not telling Burger King how it should be done.

I was a manager at BK back in the 90s. The whopper has undergone some changes since then(at least in my area), and not for the better. They no longer steam the buns which makes them hard and dry. They no longer use shredded lettuce so when you take a bite the whole leaf slides out. The meat now has like an artificial charcoal lighter fluid flavoring added to it(gross, I know). And for whatever reason whenever I happen to get one I always get the tomato butts. When I was running my store I threw the tops and bottoms out. I know it's fast food but I tried my best to at least make it palatable.

As a passionate cook who lives in a very uncultured small Midwest town, I absolutely love your But Better series. There is literally one restaurant that I enjoy going to, the rest is all bar food or fast food joints, and I end up succumbing to these crap menus because I just don't have time or feel like cooking at home after a long day of cooking at work some days. I begrudgingly order something and as I eat it all I can think is, "Why didn't I just carve out some time to just make this at home, but better?"

I like the wide burger king size - its a lot more balanced in flavor and ingredients and easier to bite into than a 4 inch high narrower burger. I do like your channel and many of your 100s of recipes are great.

If there's anything we can all agree on about what Josh said, Burger King is _not_ the king of burgers. Overpriced, sloppy, not even tasty. Some of them tasted like nothing. My local burger chain delivers food that tastes better than theirs. Its cheap, fast and delicious to top it off. Even those sImPliStiC burgers taste way better than the Burger King counterparts. So yes, there can _absolutely_ be better food for fastfood meals. If you're paying and have a choice, you never have to compromise quality. Even in fastfood. This "simplicity" bs is an excuse.

I went to Burger King in Germany once and they had this king selection menu with Kings mustard & smoked cheese double. Literally the best burger I’ve ever eaten at a fast food chain. If you told me that this burger was made in a burger restaurant, i would believe it

A lot of chain restaurants are better in Europe. Went to a Subway in Germany near my hotel and it was just... stellar. On par with the best mom'n'pop subs in my home area in Massachusetts. Not gonna say better, but definitely whoops U.S. Subways and other chains. I suspect the restrictions on many additives and preservatives in Germany/other European countries helps improve the overall taste, also many ingredients often have less distance to travel from the farm to the restaurants.

One of the best burgers I've tasted was a signature mcdonalds mexican burger in mexico, it was basically a better quarter pounder without ketchup and with pico de gallo, guac and pepperjack cheese, it was incredibly good for a fast food restaurant.
