hey Josh ! I'm from Belgium and make Liège waffles for a living and I have to say this recipe is on point ! I would recommend to use some bigger pieces of pearl sugar (C40/C45, if you can get your hands on it, I know it can be difficult in some part of the world). That way you get some crunchy caramelised pieces of sugar while you bite into the waffle, and that's reallyyyyy satisfying and tasty ! Also, belgian fries for the next video ?

And since you are the expert on this subject, I assume that the light and fluffy "Luftwaffles" mentioned above were more than likely the Brussels style waffle that also has a yeast leavened batter, no? Liège Waffels are traditionally enjoyed with little to no toppings , fresh from the iron in a little folded paper wrapper . They greatly differ from Brussels' Waffels that have a much lighter dough that does not contain as much sugar , are long and rectangular in shape , and those are usually the one you drown under fruits , whipped cream or ice creams and various toppings and a drizzle of fruit or caramel or chocolate sauce . A lot of people have surely mentioned this before , but i feel like i needed to point it out anyway . Liège Waffels are great , but i personally find it a shame that Brussels Waffels are usually unknown worldwide despite the popularity of Belgian Waffles :D

That is indeed what gives them their much lighter and fluffy texture :) Those are Brussels Waffles . Brussels is the Capital of Belgium , and Liège is a major city in Western Belgium , so both are Belgian Waffles :P

In America the term Belgian waffle refers to the shape: thick, round, and with deep pockets. This is in contrast to the more traditional shape of thinner and square. Leige Waffles are referred to by name.

Tip for everyone: When making the regular waffles, separate your eggs. Mix dry ingredients together. Mix wet ingredients (except egg whites) together. Add wet to dry, stir together, whip egg whites to soft peaks. Fold egg whites gently into batter. Proceed with cooking. You’re welcome. Found recipe in the 70s, forgot where.

It was possibly the _Better ‘Homes and Gardens_ cookbook. Their recipe calls for separating the eggs and whipping the egg whites. The best homemade waffle recipe I’ve found is called the "Waffles of Insane Greatness." I found it on a food blog I used to read, but the original can be found with an Internet search. They taste just like the waffles you get in restaurants and they are insanely fast & easy. The batter comes together in 10 minutes tops and then requires a 30 minute rest once it’s made. The secret to its celestial lightness is… cornstarch. Here’s the recipe from the blog with a few of my own notes set off by asterisks and parentheses. WAFFLE OF INSANE GREATNESS” RECIPE The original version of this recipe calls for 1 cup milk or buttermilk, but I split the difference and use ½ cup of each. The texture of the batter was lovely, and I liked the slight tangy quality of the waffles, so I’d recommend that you try the same course of action. * I use 1/2 cup of milk soured w/ 1 tsp. Of lemon juice because I don’t usually have buttermilk. I yields the same results.* Also, this waffle works in any kind of waffle maker. ¾ cup all-purpose flour ¼ cup cornstarch ½ tsp. baking powder ¼ tsp. baking soda ½ tsp. table salt (decrease to 1/4) 1 ½ tsp (1/2 TBLS) sugar ½ cup whole milk ½ cup buttermilk (or 1/2 cup of soured milk by displacing 1 tsp. of milk with 1 tsp of lemon juice. Let sit for 5 mins.) 1/3 cup vegetable oil, such as canola (or grapeseed) 1 large egg, lightly beaten ¾ tsp. vanilla extract In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, salt, and sugar. Whisk well. Add the milk(s), oil, egg, and vanilla extract. Whisk to blend well, so that few (if any) lumps remain. Set aside to rest for 30 minutes. Preheat a waffle iron. Follow your waffle maker’s instruction manual for this, but my guess is that you’ll want to heat it on whatever setting is approximately medium-high. My waffle maker has a heat dial that runs from 1 to 7, and I turned it to 5. Oil the waffle maker. (Original text said oiling wouldn’t be necessary, but that’s so not my experience.), Pour an appropriate amount of batter into your hot waffle maker. This amount will vary from machine to machine, and you should plan to use your first waffle as a test specimen. Cook until golden and crisp. Yield: depends on the size and configuration of your waffle iron (~ 3 for my regular, non Belgian, waffle maker).

I haven't made waffles since the 90s -- seriously. My mom bought a cheap waffle iron, and I wanted to make some. The instructions with the pancake mix (yup) resulted in a batter thicker than pancake batter, but definitely not as thick as that waffle dough! The purchase of the cheapest waffle iron my mom could find was inspired by the continental breakfast at a hotel on a recent vacation. There was a flipping Belgian waffle maker in the mix of it, and again, the batter in the cups was not as thick as what I see in this video. I've been wanting a (decent quality) waffle maker, and this episode just makes me want one more. So thanks for that, dude. You're convincing me to spend even more money.

Love this review! Actually going to try mochi waffles tomorrow but personally I’m a Belgian Liege waffles kind of guy. Always love those crisp crust covered with crisp caramelized pearl sugar then chewy insides with crystalized sugar bits in every bite. I mean, it’s texture heaven. This would make a good new playlist, where Josh takes various versions of something and compares them. What I got from this is that both Belgium and Mochi have their merits, but those are the top 2 options that shine above all the rest depending on what you currently feel like. I kind of want to see him make scandinavian waffles, since they are totally different from all the ones he has shown. They are like the crepes of the waffle world. Thin and usually made with cardamom these waffles usualle have individually heart shaped pieces within the whole waffle

Yeah, Swedish friend was telling me about these. There are only two waffle irons on Amazon that produce such thin waffles, but the pictures show that neither of them heat very evenly. I wonder what the Swedes use?

@@absolutelynothingtoseehere Even as a dane it can honestly be struggle getting a waffle iron that heats evenly but it's not meant to be perfect. You should probably search with danish or sweedish words to see the right ones. Waffle iron is called Vaffeljern in danish and that should get you some more results

Question Time: with the Belgian waffle can I pre-make the “dough” the night before and then pop it in the fridge overnight and cook it for breakfast the next morning? I don’t think I can wake up early enough to sneak in an hour of dough rising to surprise my partner with waffles 😭😂

Yes, I always make yeast dough the night before and put it in the fridge. The next morning get it out of the fridge and leave it for like 20 mins

Hmmm....despite what the first reply said (it's not a bad idea), for me if i leave a dough to sit overnight, the result just ends up tasting like fermentation and yeast... which imo is not a very good flavor for dough, especially for waffles. If you don't want it to taste like all your hard work has gone to waste and you don't want to start over, don't let it sit for no more than 2 hours.

Favorite topping for waffles are sour cream and raspberry jam. An amazing combination of tangyness, a lil bit and sour and just enough sweetness. Plus point if the waffle is a bit crispy, and a lil salty form the butter

They look so amazing real class there but you should try the waffles we have in Sweden, they are wider and thinner. Waffle with whipped cream and cloudberry jam or with icecream and berries😋

I think the norwegian and swedish waffles are the same/similar except maybe some differences in toppings! These kinds of waffles are my favourite and really versatile!

Made the mochi waffles with Bananas Foster tonight. Instead of whipping the cream, I added a little sugar and vanilla and drizzled it over. As a New Orleanian I have eaten a lot of bananas foster. This was a good simple recipe and I wound up with some toffee in the pan, because I cooked it too fast, but there was a generous amount of sauce so it worked out. So the recipe made 2 Belgian waffles, they turned out *amazing*. I put 1/2 waffle and 1/3 of the sauce on each of 3 plates and we gobbled it right up. Solid dish, will definitely make again. 11/10. We licked the plates.

Am I the only one who measured 3/4 of granulated sugar out for the mochi waffles only for that to be more than double the sugar that Joshua actually used (I’m sure he actually measured out 70g which is less than half of 3/4 cup). They were still delicious, but overly sweet for sure.

Okay yeah maybe these are good but the best waffles are the Belgian ones you get in british high schools. The sugar crystals… the feeling of achievement when you get to the canteen in time to actually have one… pure perfection. The only good thing to come out of british high schools. Fight me.
