Jowar roti (or sorghum flour roti) is an Indian gluten-free flatbread. Many think that jowar flour rotis are very difficult to roll or it becomes hard after making. But if you will follow exact steps then you can make perfectly rolled jowar rotis that are smooth and soft.

Dear if you want soft jowar roti so you may do some long process..i dont thing ke isme koi haraj hai..direct mei roti bahut dry banti hai

Its a long precedure due to cooking in the cooker and nobody has that much time & not convenient. Just boil equal amount of water, add little salt, & 1tsp oil, add jowar/bajri flour and mix with spoon, turn of the gas, cover & let it rest abt 3 to 5 mts so u can knead with yr add well. Dough is ready. Make balls, pat once in dry jowar flour, & roll.

Your method is correct. I make jowar and bajra rotis in the same way. What shown in this video is a long process.

Yes even I use hot water to make it.Luckly my house help is maharashtrian and she makes jowar,bajra any such bhakhri easily by using normal water,so it depends.I use hot water which makes dough sticky and easy to make.

​@@VegetarianTastebuds I know 2 methods..1 kneading with normal water , then rolling like normal chapati but this always end up with slightly dry and hard texture like Rotla style and another mixing ata in Boiling water and then steam it for 5mins after switching off the gas. In this we can roll rotis very soft without breaking it and thinner too. But yours is new method, will try and let you know. Thanks for sharing this.

Jowar is a gluten free grain, so we need to develop stickiness in it for binding. Cooking jowar atta helps in that process and so it becomes very easy to roll rotis and rotis turn out soft.

Add psyllium husk or lanthanide gum powder in jawar powder and make dow to prepare roti.

Yes, coat the dough with ghee and keep in an air tight container in refrigerator. You can store it for upto 24 hrs

I followed all your steps, but roti is breaking when I am rolling it. Did I miss anything.

Dough might be little overcooked or it might be lacking moisture. Next time cook it on low flame. When kneading the dough if you feel it is dry, sprinkle 1 to 2 tsp of water and knead again. Water quantity can vary as per the flour quality. Hope this helps

Hi Kinjjal, maybe dough would have been over cooked. Another reason can be lack of moisture. Qty of water depends on quality of flour. So next tym you can try adding lil more water

Yes, you can. Cook for 4 to 5 mins medium flame, and follow the same steps

Hi Ritaji. There are many versions to make jowar rotis. This is our version to make jowar rotis softer and even stay soft after 24 hrs. It depends on you whether you choose this method or continue with the method you use. Thank you 😊

There is one. You can knead the dough with hot water, though it won't yield same soft texture but surely you will notice a difference

I’m new to making these, making with the boiled water etc but mine are a bit crisp not at all soft, crack on folding please advise 😢 How thick should the roti be for lovely soft result?

Make sure you are following exact instructions in the video. Not pressure cooking for more time or adding water. Roti can be medium thick

This is so clever, it makes it easier to roll out without cracking. One can pressure cook a larger amount of dough if you need more rotis.
