Great recipe, if you add flax seed powder or grains and you leave it for few minutes, it acts as gluten and it reduces the chance of breaking it when flipping the baking ....

Well, my first rotli broke up as soon as I turned it... I didn't give but made the next one and while flipping it over gently I supported and it turned without breaking up....yeeee, success at last. Making these rotis is not a national issue, but cooking recipes, I am 78 years young, and fail at many recipes. Your background should not dictate and expect your cooking abilities. If people do, they are totally wrong. Cooking is trying to follow recipes, you can be good at lots of other recipes. Do not feel any pressure of your background, but enjoy what you do.

Jowar Paratha Recipe by Nisha Homey: Ingredients: 1 cup jowar atta (sorghum flour) 1 cup water Additional 1/2 to 1 cup water Salt to taste 8 garlic cloves (finely chopped) 1 green chilli (sliced) 1 to 1.5 tbsp coriander leaves (finely chopped) 1.5 tbsp A2 desi ghee (or wood-pressed oil) Steps: In a bowl, mix jowar atta with 1 cup water. Mix well, then add salt. Add 1/4 cup water and mix well. Add another 1/4 cup water. Water should be added little by little to avoid batter from being too loose. Add more water if batter is still too thick. Consistency should be pourable, neither goopy nor watery. Add garlic, green chilli & coriander leaves to the batter. Mix well, then add in A2 desi ghee. Batter should be of flowing consistency. Set batter aside for 5-10 minutes. Batter should have slightly thickened. Add in 2 tbsp water and mix well. Heat a cast iron tawa and reduce flame to lowest. Grease the tawa with wood-pressed gingelly oil. Take 1 to 1.5 ladleful of the batter and pour on the tava. Tava should be medium hot, NOT very hot. Spread out the batter lightly. Cover tava & cook on low flame for 1 minute. Top portion of the dough should be cooked, not sticky. After 30-40 seconds, flip dough over. Cook for another 30s and flip over. Lightly press down the sides. repeat the flips and pressing down the sides until the dough puffs up. When the roti puffs up, continue cooking until the dough turns brown. Once cooked, serve on plate. Batter can be kept in fridge for 3-4 days

Thank you for this amazing recipe. Hi all, I decided to try it out although I saw negative posts. I used in addition onions chopped very fine and some kasuri methi. I used a seasoned iron tawa. Let me tell you all, I was able to flip sides several times, it did not break, the second one fluffed up a bit too. I am sure by third fourth roti I can work on it fluffing more. I think it’s all about the right heat, the right batter consistency, have you kept it long enough. Yes it was very tasty ❤️

I'm in Canada and just found your channel. Lovely video. I wanted to point out that the flour to water ratios did not work for me. I used sweet sorghum flour in one batch and millet flour in the other batch. The water I used was only one cup, not 1.75 as in the video. The texture of the sweet sorghum was not the same as in the video, but the millet did look similar. With both batches, I could not get the batter to be thin in the pan, even though they were thin to pour. The batters became very thick as soon as I poured into the pan. I had my stove on medium heat. While I was disappointed I couldn't get wraps out of the batches, I did use them as sandwiches as well as with humus and other dips. Very tasty. I will make again as is. I am on the hunt for the flour you used though to be able to make the wraps.

I prepared finger millet (nachni) flour rotis with one cup of finger millet & a little warm water adding slowly little at a time then added little salt & 1 teaspoon ghee to the batter after kneading it & prepared on thick Cast Iron tawa, the rotis came out round soft & in perfect shape. You can master the art with a lot of Patience & Practice.

Jowar flour also makes wonderfully easy and delicious dosas; once I learned this, I started making them at least once a week. I don’t have a grinder, so regular rice/dal dosas aren’t really doable for me. If you want to make crispy jowar dosas, add a little rice flour to the millet flour. It works very well with minimal effort or equipment.

Made this for my One year old toddler and he absolutely loved it. Added garlic onion and coriander with a pinch of freshly crushed cumin seeds. Itwas very flavorful. My only problem was it wouldn't fluff up. It looked like a pan cake. Followed your detailed steps just the qtys varied. Could be because of that.

I had no success with this but I wonder if it was because I used red sorghum flour? 1 cup of that flour and then 1 cup of water made it runny already at that point so I couldn’t add more water. Any tips greatly appreciated!

Try mixing water little by little in stages.. Then make sure you rest it atleast 10 minutes before cooking
