Jowar Paratha Recipe by Nisha Homey: Ingredients: 1 cup jowar atta (sorghum flour) 1 cup water Additional 1/2 to 1 cup water Salt to taste 8 garlic cloves (finely chopped) 1 green chilli (sliced) 1 to 1.5 tbsp coriander leaves (finely chopped) 1.5 tbsp A2 desi ghee (or wood-pressed oil) Steps: In a bowl, mix jowar atta with 1 cup water. Mix well, then add salt. Add 1/4 cup water and mix well. Add another 1/4 cup water. Water should be added little by little to avoid batter from being too loose. Add more water if batter is still too thick. Consistency should be pourable, neither goopy nor watery. Add garlic, green chilli & coriander leaves to the batter. Mix well, then add in A2 desi ghee. Batter should be of flowing consistency. Set batter aside for 5-10 minutes. Batter should have slightly thickened. Add in 2 tbsp water and mix well. Heat a cast iron tawa and reduce flame to lowest. Grease the tawa with wood-pressed gingelly oil. Take 1 to 1.5 ladleful of the batter and pour on the tava. Tava should be medium hot, NOT very hot. Spread out the batter lightly. Cover tava & cook on low flame for 1 minute. Top portion of the dough should be cooked, not sticky. After 30-40 seconds, flip dough over. Cook for another 30s and flip over. Lightly press down the sides. repeat the flips and pressing down the sides until the dough puffs up. When the roti puffs up, continue cooking until the dough turns brown. Once cooked, serve on plate. Batter can be kept in fridge for 3-4 days

A cheela does not puff up like a paratha does. Because of that difference, I will not shy away in calling it a paratha. Don't know what Ranveer's roast was though...:-)

I will make it for tomorrow- I am celebrating my birthday with my family and making chicken tikka masala with paratha, a chick pea salad and fresh fruit for dessert. I use the same method to make my kids pancakes. No veggies in the batter ofcourse. 2 eggs, a little salt and baking soda and milk instead of water. It tastes awesome with honey

Great recipe, if you add flax seed powder or grains and you leave it for few minutes, it acts as gluten and it reduces the chance of breaking it when flipping the baking ....

Wow i made this today and honestly it was delicious. I’m new to gf grains and wasn’t a fan of jowae roti 😁 but this parantha is easier and tastier. Thank you for your hardwork and giving us free recipes. Ppl would charge thousand for this

I had no success with this but I wonder if it was because I used red sorghum flour? 1 cup of that flour and then 1 cup of water made it runny already at that point so I couldn’t add more water. Any tips greatly appreciated!

I love how you explained the nutrition content and precautions, I was looking for easy wrap with more potassium and those micronutrients that you mentioned. I want to cook more with traditional flours and preps. I am trying making Dosa but I am confused if dal dosas are safe to eat if made just by soaking the dal overnight and no fermentation

I am not how many of you actually tried this recipe. I tried it a number of times with different consistency of batter but not even once it came like a roti. 95% of the time it just broke into pieces every time tried to flip it. Even when i managed to flip it in one piece it looked and tasted like dosa and not like roti. It just does not puff up at all.

Is the inside cooked throughly also ? I tried batter dough to make whole wheat roti , it was sticky inside. Please do let us know How is the texture of jowar roti ?

I’ve been gluten free and having jowar and amaranth rotis with avocados for breakfast. The roti from the roti presser always is a bit hard although tasty .Will try this fabulous liquid recipe now. It can be had anytime. Thanks for your great HEALTHY recipes!
