Thank you so very much for this recipe you've shared. It reminds me of exactly what my mother and my Nana used to make. Brings back wonderful memories of long ago. Their rice pudding and bread pudding recipes were a couple of my favorite things to eat when growing up. I'm definitely going to try making this very soon. 💕

I am blessed to have farm fresh milk from my in-law’s farm. Since they have an almost 5% butterfat content, it makes a wonderful rice pudding! Both my husband and myself grew up on dairy farms so baked rice pudding was almost a weekly treat. Thanks for your recipe!

This is the way my mother made it in the 50s 60s using her MIL's very old (1800s) recipe. That grandmother was born about 1890. Im looking forward to trying it.

You just gave me a great idea on what to do with fresh whole milk about to expire! However instead of short grain rice, I used this local grain called Adlai or Job’s Tears! They are kind of similar to barley, and it native to my country, Philippines 🇵🇭! Cheers!

Dear Stephanie Jaworski, Thank you very much for Baked Rice Pudding Video Recipe on KZbin. We Finns eat Finnish rice porridge (riisipuuro) at Christmas and whole year round. I cook an organic short grain rice porridge with organic rice, organic whole milk, salt and optionally organic vanilla beans and stick. It takes to cook rice porridge one hour when rice porridge is done on the stovetop. It is as common to make rice porridge in the oven and on the stovetop. This is even a common lunch at schools. Rice porridge is a traditional Christmas dish in Finland. We served rice porridge with cinnamon and sugar. We served rice porridge with a mixed fruit soup (apricots, dried plums and raisins) (sekahedelmäsoppa) at Christmas. I like warm and cold rice porridge. Greetings from Helsinki, Finland, Europe!

Stephanie, to this: “Of course, there is always the question of whether you like a skin (crust) on the top of your pudding. If you do, then I wouldn't stir the rice pudding in the final half to one hour of baking.” I’m 73 - when I read this, I near fell out of my seat - you took me back some 65 years as a lad in the woods of British Columbia! My mum was British - we were new immigrants to BC from Australia - the forest was my back yard with bears, mountain lions, and many other “be careful’s,” a far cry from iconic kookaburras, emus, koalas, and kangaroos of my homeland. My mum would bake this in her wood-burning stove weekly during BC winters - such comfort food! But the pièce de résistance was the moment she peeled off the “skin” and let us ankle-biters* revel in it as though we had just won the lottery! I have long waited for this recipe to show up, and thanks to YOU, I will bake it today and make a bloody pig of m’self, reveling in the skin…and the pudding! THANK YOU Stephanie, for being YOU! You’re an absolute treasure! *Aussie slang for small kids.

Love baked rice pudding which is the only version of rice pudding I ever make. Try substituting maple syrup for some of the milk and hold the brown sugar. If using maple syrup which reduces the fat content, substitute 1/2&1/2 for the milk in the same quantity.

In Pakistan we call it "kheer", a traditional sweet dish. We used to made it in a big pan on the gas hob, stirring occasionally.. adding green cardamom as a flavour. When it starts thickening we add sugar. Garnish it with crushed almonds and pistachios. Let it cool in the refrigerator and then 😋😋 But I will surely try your recipe....with vanilla flavour

Stephanie, you make some excellent recipes. Rice puddings are so good. I'm not sure whether aborio rice, which is good for Risotto, would also be a good choice for rice pudding because it absorbs the liquid really well. I will be trying this. Stove-top and oven baked are both good for these puddings. Thank you!

Here in N Z when we make baked rice pudding, we make a mixture of whole milk, sugar and whole eggs plus a sprinkling of nutmeg, then we poor it over cooked rice and then bake it, it is so delicious.

You can also add saffron for these kind of desserts.I love all kinds of milk puddings. We call this kheer in Aisa. We sometimes make this with vermicelli, in more eastern countries condensed milk and evaporated milk is used with cassava.

I also love rice pudding and enjoyed it for years in Quebec at a Greek owned family restaurant in our town. It was truly delicious-nothing compared, and I would often ask the owner what his secret ingredient was. He didn't tell me until the week he sold his business and retired. Vanilla ice cream added to the base during cooking, I have the amount copied down somewhere for a restaurant-sized batch, but generally I just eye-balled it during preparation for myself.

Recipie is nice.I liked the idea of baking ,as slow cooking will offcourse enhance the flavor this is somewhat similar to the Indian version of Kheer cooked on stovetop ,but baked one is also good .I will prefer to roast or Sautee the rice first by adding some clarified butter and cloves and cinamon. Then roast the rice grains and then add milk,and either sugar or jaggery for sweetness.we also make use of dry fruits and saffron. We also use the coconut milk instead of normal milkOther falvouring agents are offcourse. Cardmmon and Nutmeg powder.

Yes but I would stir and check the rice every 10 minutes. The pudding does thicken a lot after cooling.

Just made this with your recipe (Raisins and Cinnamon) it's excellent!!! My question is this. What can I do so the milk does not burn at the bottom of pan. I use induction stove and still getting use to it. It's nothing to do with your recipe. I made your simple chocolate cake yesterday and it's beyond spectacular!

They say if you rinse the saucepan with cold water first, it prevents the milk from sticking.

Yummy! This looks so good...Like the hands-off approach. Very fuss-free! In my culture we add cardamom to it & sometimes afterwards it's topped with slivered almonds or crushed pistachios, som people add sultanas/raisins while cooking it, but we make it on the stove-top & cook it for several hours (it's a labour of love, but this is usually cooked for special occassions), stirring constantly. Love that type too, but never made this version in the oven (except from a can !). Always meant to try it that way. Btw, is there a reason why the vanilla isn't added beforehand? Would it burn if added earlier (while still cooking in the oven)? Just wondering about that. Anyway, thanks for another great demonstration & explanation. When I watch other people's videos & they talk a lot it annoys me sometimes, but you have such a sweet personality, that it feels like getting a tutorial from a kind favourite Aunt who's sharing her secret recipes with you ! Always love watching you & your style is very warm & comforting to watch. Very informative, too. Can't wait to try this now. Have had a bag of pudding rice floating around for some time now so you brought me this recipe just in time! Thanks so much for sharing your wisdom & recipe. Your husband & adult children are so lucky to have you. I can tell you do everything with so much care & love. One of the most important ingredients in cooking in my book!😊

As I watch / read this recipe, I cannot help but wonder what it would be like to prepare it in a slow cooker (or a multi-cooker). I can't imagine running the oven for two hours just for this recipe... (although I run the oven all the time for a variety of purposes, including many of your pastry recipes). I have prepared oatmeal in the slow cooker before (must use rolled oats, not instant), with incredibly creamy results. Like many other commenters, I love kheer and its cardamom / pistachio flavouring.

Here is the way I think about running the oven that long. In the winter when your heat is on that heat from the oven goes into the house and therefore your heating system runs, less so it's more or less a wash cost wise. In the summer if it's hot you don 't want to run your oven that long because it heats up the house and costs more money if you have to run the AC more. So I typically only make this in the cooler months.

The Asian in me is thinking of making this in the rice cooker 😂and then finishing it off in the oven. Chinese congee ratios are abt 1:8 to 1:10 liquid to rice for reference and this recipe’s is much higher thus liquidy.
