I've made the condensed milk version of dulce de leche. I use a pressure cooker usually. It turns out pretty good, slightly thicker than regular but delicious. The only tip is to ensure that the can is completely cooled down before you pop it open or it will explode.

Something was definitely wrong with that Russian tea cake (also called Mexican wedding cookies!) recipe. The dough should be dry and crumbly, and the cookies shouldn't spread in the oven. They should also be baked just until set and only the bottoms are lightly golden, then rolled in powdered sugar while still fairly warm (I roll them once just a couple minutes after coming out of the oven then again when completely cool). I also HIGHLY recommend making them with pecans instead of walnuts! It gives them a much richer flavor🤗

You can buy the already caramelized condensed milk in the supermarket's International aisle (only in bigger ones like Edeka or Rewe), where the Russian food is. It's usually from a brand called Dovgan. It's an important ingredient for Russian wafer cake. You might wanna try this one, too, as well as Russian honey cake. They're both delicious. I'm not Russian but I got to try them at a Russian schoolmate when I was younger.

Question for anyone who's had the lemon carrots, is it always made with evaporated milk? Cuz I've made a filling like that with lemon or key lime, but I always use heavy cream because the acid reacts with the cream to make the mixture *really* thick. Usually I use it to make a poke cake, but I can see it being good with the cookies too🤷♀️
