Nobody else but Julia Child could get away with calling Jacques Pepin "Jack" on the regular and on the air. Thanks for posting these episodes for us to enjoy my friend, good stuff indeed! 👍 👍

I love how Pepin doesn't call it fond, but crystallization. He did this always in any old cooking shows from 20-30 years ago.

He really goes out of his way to distance himself from his French background and upbringing, with his insistance on being in Connecticut and all. Man wants to be an Américain

What is fond? Another name for the process of crystallization? Never heard that before.

Pretty much; it's French for "bottom," so it refers to the sugars, proteins, and other affiliated stuff that cooks onto the bottom of the pan that you then deglaze.

Fondant. Foundation. Funny that Jacques went to the English. Crystallized. Sounds pretty. It’s something that happens because of the process of cooking. It’s more accurate I think in the process of cooking. Also known as glaze, so then you deglaze with wine, vinegar, water. Glaze connects better with crystallization than fondant. I think. Anyway, 2 in the morning here. Last call. And good night.

Love these two but it is so strange that know nothing of fresh water fish except trout which is not so good compared to crappie, blue gill and white catfish.

Have you heard of the James Beard foundation award? Jaque has 24 of them. Julia her cooking was revolutionairy at the time, she is a legend, she has won several awards herself for her shows.
