I so loved this show, I learned a lot about cooking from watching Julia and Jacques do their thing. Julia was OTH; she'd say whatever was on her mind...LMBO!!! I've always liked salads, and I particularly learned a lot about how to prepare them properly from watching this episode. Inspiring. Thanks for posting.

They were both primadonnas at the top of their game. But they were always good sports with one another and made it work. I think they were genuinely friends despite obvious differences in cooking ideas during the shows. They also probably had a great time with their episodes!

I love that Jacques had the confidence (and humility), to play the fool in their opening gags! God bless him, that's the mark of a great man. He was unfailingly respectful and generous to Julia on the show, when so many famous male chefs would have tried to talk over her/dominate, due to her sex and her age. Not Jacques Pepin. He always judged it just right, letting Julia have the spotlight when she wanted to make a point or demonstrate something, and quietly taking up the slack and taking charge when appropriate, keeping the show motoring. Together their knowledge and talent for food created a sensational cooking show. He's a wonderful man and Julia Child was a wonderful woman - Julia & Jacques is surely one of the most charming, authentic and timeless TV partnerships of all time. LOVE them!

The "Adulterated" Caesar (with anchovies) Make a paste with anchovies, butter, minced garlic, worchestire, dijon mustard and some grated Parm Reg.. Add lemon juice, smoosh it all together, set aside. The lemon juice will start to break down the anchovy bones. You can do this in a mortar and pestle, a bowl with a wooden spoon, or a Bullet or Ninja. Shred your Romaine hearts into bite sized pieces. Squeeze lemon juice on the lettuce, and a sprinkle of salt. Add olive oil to your anchovy paste and whisk together, pour over lettuce pausing to stir as you go. You can add a coddled egg like Julia does for extra richness, or a dash of Mayo, but I find if I use a creamy mustard it just fine. Splash with dashes of good red wine vinegar (not too much), add extra grated Parm, serve with fresh grinds of pepper and the croutons. If you or a guest especially loves anchovies garnish the salads with a few extra filets.

It’s not, because Italian cuisine is very traditional and unwavering in what is exactly proper for a recipe. This show was great because it presents a melding of cultures and an encouragement to tweak any recipe to taste. Or change it. The Italians are still lacking in that.
