Spring Botanical Series: Dogwood Cookie

Hi! I’m back with the second video in my spring botanical series, and I’m making my favorite flowering tree of all - the dogwood. I love the elegant simplicity of the flower and the graceful arc of its ruddy brown-grey branches as it begins to flower each spring.
To pay tribute to this fave springtime floral, I hand-pipe every single petal, center, leaf, and branch, and then hand-shape and individually airbrush each piece, before putting all of them together on an airbrushed and stenciled cookie. Indeed, this cookie is a labor of love, much like the snowdrops, which were the first in this series. However, it’s so rewarding to see the dogwood flowers finally take shape, and all of the detailed piping involved is a great way to practice piping techniques!

COOKIE/ROYAL ICING TRANSFER SHAPES AND SIZES:
Cookie: Any cutter between 4 and 5 inches will work well, but the plaque I used in the video (which was custom-made and is, unfortunately, not available for sale) is 4 1/2” W x 4 3/4” L
Big petals: 5/8” W x 7/8” L, shaped inside paper towel tube, cut in half
Small petals: 1/2” W x 3/4” L, shaped over 7/8”- to 1 3/16”-diameter dowel rods
Centers: 3/8” diameter (large); 1/4” diameter (small); piped with Wilton #1 round tip
Leaves: 3/4” to 1 3/4” L (about 1/2” to 3/4” W at widest spot), shaped over 1 1/4”- to 1 3/4”-diameter dowel rods
Large branches: 4” to 5” L, piped with Wilton #5 round tip
Small branches: 1 1/4” to 2” L, piped with Wilton #4 round tip

AIRBRUSH COLORINGS USED:
For small petals: Spectrum Flow Baby Pink, Chefmaster Harvest Brown, and AmeriMist Electric Green
For big petals: As for small petals, with the addition of AmeriMist Deep Pink at the innermost end of each petal
For leaves: AmeriMist Avocado Green and Chefmaster Harvest Brown
For centers: AmeriMist Avocado Green and Chefmaster Harvest Brown
For buds: AmeriMist Electric Green and Chefmaster Harvest Brown
For branches: Chefmaster Harvest Brown and AmeriMist Super Black
ROYAL ICING COLORINGS* AND CONSISTENCIES:
White: Thick flooding consistency for small and big petals, and “glue” consistency for assembly
Light Avocado (AmeriColor): Thick flooding consistency for leaves
Gray-Brown (custom blend of Chefmaster Harvest Brown with a touch of AmeriColor Super Black): Thick piping consistency for branches, and super thick putty (or modeling) consistency for buds
*I use liqua-gel concentrated colorings to tint royal icing.

Thanks so much! I don't sell my cookies so I don't have a price off the top of my head, but I'd price them the same way I did when I did sell. I'd go back to the fundamentals, build up all the costs (mostly labor), and mark up to make a profit. Obviously, they'd be expensive and only a certain clientele would likely appreciate the value.

Hi, Nancy. Thanks - I don't actually make my cookies to sell them. I make them only for instructional purposes - videos, classes, and such. But when I did, I would have boxed something like this, so nothing hits the pieces on top. I probably would not send something so delicate long distance, unless I personally carried it on the plane with me.

Yes you can! I use coloring particularly formulated for airbrushing on sweets; there are a few well-known brands: AmeriMist by AmeriColor, Spectrum Flow, and Chefmaster. I mentioned the specific ones I used in this video. Be sure always to use their airbrush colorings and not their gel colorings.

Thanks. I don't know, as I haven't timed myself making them, and knowing labor costs is critical to setting price. (I don't sell my cookies, which is why I don't time myself.) Wish I could be more helpful, but, again, how one prices decorated cookies is almost completely a function of labor costs, as they can be very time-intensive.

Julia, other than ooh and aah, what do people do with your cookies? It's seriously a crime to eat them and yet a waste if not eaten as they won't last indefinitely (or long at all). Other than for the White House or Oprah, who are most of your clients? The days of custom hand-made invitations and over the top events seem to have evaporated during the recession of 2008 and never returned to their full glory. Your work is exquisite I'm just so curious about when, where, and how they're used.

I actually no longer serve customers (with edibles); I am primarily an educator, teaching these techniques all over. Prior to COVID, I traveled the world giving hands-on classes (they're just coming back); I also make instructional videos and teach online. In addition, I design cookie decorating products to supplement my income. There's more to be made in teaching than in serving customer orders these days, so that's where I need to be focused in order to continue to afford to create. It's very time-consuming work, but fun too!
