hello. Could you tell me what gauge is the stainless steel sheet of the evaporator where the ice is made? And also what size of the copper pipes and with what solder are they welded to the stainless steel sheet? Sorry for so many questions, I don't know those Hoshizaki machines in person and I'm curious. thank you so much!

Is there a reason you use a air acetylene instead of oxy acetylene torch? I’m new to the trade and curious.

Oxy acetylene is bulky, air acetylene just one bottle easy to carry, I do have oxy acetylene I use it to seal leaks on evaps flame is small to do this kind of job, most work just one bottle is enough...
