如果上面說的還是有問題的話,還有一種可能是翻拌太久或混合手法不對,導致蛋白消泡太多,麵糊沒有了蛋白氣泡的支撐,不能讓麵糊膨鬆,所以就會裡面煮不熟。 祝你能做出一個完美的舒芙蕾鬆餅! Have a nice day!

Tried it…mine sucked. They were like thick pancakes. The taste was good though they just didn’t get tall and fluffy

The key to soufflé is to whip the meringue to the right dry foam and keep the temperature. Preheat the pan to 175 degrees in advance and control it between 170-175 degrees. Squeeze the batter into the pan, cover it with a lid, and fry it on each side for about 4 minutes. It will basically not collapse and will not become a pancake. I wish you can make the perfect soufflé pancake!
