As a true Mexican ie someone that actually lives in Mexico not someone who bailed on the country and fled to the US I can say this recipe is pretty spot on. That’s what you’ll get at most restaurants and houses alike. Looks amazing!

Some thoughts: if something is worth doing, it's worth taking the time to do it. And this rice is worth it! My Costa Rican housemates loved it, even though it's very different from their traditional favorite, gallo pinto. And for those of you who have problems with carrots and peas mixed with your rice because U.S. Mexican restaurants don't serve it that way--c'mon! You don't really believe that Mexican, Chinese, Italian,etc. eateries in the U.S. serve authentic foods from their cultures, do you? They anglasize the food to appeal to us. Also, Mexican cuisine can vary from region to region. There may very well be parts of Mexico where carrots and peas are not part of this dish. So, relax, put down your smart phone, and try some REAL food for a change?

@@JustOneBitePlease: I am 100% positive that Mexican rice was not prepared with black pepper, extra-virgin olive oil, crushed tomatoes, tomato paste and kosher salt in Chapala in your grandma's days (or her mother's days) in those days Chapala was a very small fishing village and the only way to go to Guadalajara was by means of horse-drawn carriages on dirt roads, and you wouldn't even find those ingredients (except for black pepper, which is not an ingredient in authentic Mexican rice) in Guadalajara. You look like you are 50 years old, so your great-grandmother must have been born around 1920 - 1930 and in those years there were no supermarkets or large grocery stores to buy those products in Guadalajara, everybody would buy their ingredients for preparing meals from the Mercado or Tianguis and they would buy fresh vegetables and grains and meat in bulk by the Kilo, and everybody would use pork lard because vegetable oil was not yet available. Extra-virgin olive oil was first available in the Guadalajara area supermarkets in the first half of the 1990's and tomato paste and Kosher salt until around 2005 (they are not ingredients used in Mexican cooking). Your recipe must taste great, I am just making an observation about the time frame when those ingredients were available in the Guadalajara-Lake Chapala area. My mother used fresh tomatoes (pureed in the blender) lard and real chicken broth to make Mexican rice in the 1970's. And all my relatives and acquaintances in the state of Jalisco make Mexican rice the same way, it's not a secret to anybody. .

Just One Bite, Please? I just finished eating it, it was excellent. The red pepper and minced beef worked nicely too. I fried the beef but then put it into the mix too early, in future I would put it in right at the end. I've never cooked rice this way before. It really worked well. Thanks for the recipe!

Good video and instructions. I generally use the same steps with the exception of the peas and carrots. Just a note for all the comments regarding time; the less rice you make, the less time it takes. The time goes by quickly when you enjoy cooking.

I just want to bring up a little information. I see some people commenting and calling this method, a recipe for Spanish Rice. The preparation of Mexican Rice IS NOT the same as Spanish Rice. Spanish Rice is usually made with previously cooked white rice, diced fresh onion, sliced fresh bell peppers and NO tomato sauce. It's also seasoned differently. Both are delicious and easy to prepare. Love this version of Mexican Rice!! Thank you!

Looks excellent! I like that the rice is toasted dry, while every other recipe calls for frying the rice in oil. However, you then add oil in with the liquid. I'm not really sure what role the oil plays at that point, since it will just float on top of the water.

Hello Vizzini, It is nice to meet you. The added fat in the form of extra virgin olive oil adds richness and flavor. As the fat gets absorbed into the rice it carries flavor compounds from the spices, toasted rice, tomatoes, onions, garlic that we experience as more flavor. You can use any fat (butter, olive oil, chicken, pork, beef) of course the flavor will be influenced by its own flavor profile. I often roast chicken when making Mexican Rice and use chicken fat in place of the extra virgin olive oil. I'd love to hear about your cooking adventure when you make the recipe. But PLZ try it. once rice brown i add pecante sauce MILD and chili powder cumin garlic powder water salt pepper red pepper flakes season up to your liking whaaa la Spanish Rice Make a big batch and freeze it in qt size baggies I found its faster to make Mexican dishes by freeze refried bean ect Then micro wave it to warm up > Looks yumy thanks for sharing

I also like the fact you suggest freezing the big batch in smaller quantities. Great idea when you want to make a quick dinner at the end of a long day.

I keep a lot of things made up frozen > Hot dogs, Pizza slices, Spaghetti sauce, tamales ect ready for the micro wave. When i cook. i cook a lot of it and freeze it Just like fresh made. Cheers to ya

I’m going to try this method. I usually add the olive oil at the beginning and brown the rice with it. I’ve never added tomato paste but I’m going to try your recipe exactly as demonstrated.It looks amazing!

It was AWESOME! The rice absorbed the tomato flavor so much better because it wasn’t saturated in the oil. Also the depth of flavor that the tomato paste added was perfect. This is the only method I use now. Thank you so much for sharing your recipe!

Hi Laurette, You can use what ever rice you like to make this recipe. The key is to toast it in a dry pan until golden brown. This is what gives the rice its flavor and texture when it is cooked.

Wow I add cooking oil to brown the rice, onion and garlic tomatoe sauce and just a pinch of cummins . I have never seen it made this way, seems like it takes longer to brown..... I know we ALL have our own way of cooking. :)

I've always added oil to brown the rice. That's the way it has always been made by most people here in Mexico. I found it very shocking that in this recipe the rice was browned without any oil. I think that initial frying of the rice is essential for the most authentic taste. We almost never use extra-virgin olive oil, but just regular safflower or other neutral oil, and we would always add a sprig or two of cilantro with the pureed tomatoes.
