કોદરી ની ઘેંસ - ડાયાબીટીક માટે ઉત્તમ આહાર - कोदरी घेंस - Kodo Millet Ghens

Friends,
Today’s recipe is very simple but very healthy and beneficial for diabetics. This is very old age original recipe which is still made in villages using various ingredients and methods.
For meditation too, this is a very good recipe.
આ એક ગામઠી અને એક નિર્દોષ વાનગી છે કે જેમાંથી વિટામીન બી-12 સારી માત્રામાં મળી રહે છે. મેડીટેશન કરતી વખતે આ પ્રકારનો આહાર મેડીટેશન ને સાર્થક બનાવે છે.
Here is recipe:
Ingredients:
100 grams Kodri (Kodo Millet); - કણકી ચોખા
A glass of buttermilk OR 50 gram curd
2 tbsp cow ghee - ગાય નું ઘી
½ tbsp cumin seeds - જીરું
½ tbsp rock salt
Sweet curry leaves - મીઠો લીમડો
1 nos. green chilies - લીલાં મરચાં
A small piece of ginger - આદુ
Method:
Wash Kodri with clean water twice. Add a glass of water in washed kodri. Let it soak for 10 minutes.
In earthen pot (Clay Pot) heat cow ghee, cumin seeds and curry leaves. Add chopped green chili and ginger. Cook for a while.
Add soaked kodri, mix well. Add a glass of buttermilk and 2 glass of water (In case of curd add 3 glass of water). Stir well. Cover the lead of pot. Let it cook for 10 minutes at medium flame. After 10 minutes open the lead and check kodri by pressing between fingers. It should become soft. Kodri Ghens is ready. Garnish with coriander.
બનાવવાની રીત:
કોદરી ને બે વાર પાણી થી ધોઈ લેવી. આ સાફ કરેલ કોદરી ને એક ગ્લાસ પાણી ઉમેરી દશ મિનીટ પલાળવા મૂકવી.
એક માટી નાં વાસણ ને ગરમ કરી તેમાં ઘી, જીરું, લીમડાના પાન વી. ઉમેરી સાંતળવા. ત્યારબાદ તેમાં લીલાં મરચાં-આદુ ની નાં ટુકડા ઉમેરી બધું સાંતળી લીધા બાદ પલાળેલી કોદરી ને પાણી કાઢી લીધા બાદ ઉમેરી, બરાબર હલાવી, એક ગ્લાસ છાશ અને બે ગ્લાસ્ પાણી ઉમેરવું. સિંધાલુ મીઠું ઉમેરી બરાબર મિક્સ કર્યા બાદ માટી નાં વાસણ ને ઢાંકી દેવું. દશ મિનીટ બાદ કોદરી ને આંગળીઓ વચ્ચે દબાવી જો સોફ્ટ થઇ ગયેલ હોય તો ઘેંસ તૈયાર છે. ધાણાભાજી નાં પાન થી ગાર્નીશ કરી પીરસવું.

Yes, it is general problem usually faced while using clay pot. But there is a solution. Let clay pot cool down naturally to room temperature after using it for cooking, it means, do not wash hot clay pot directly with water just after cooking. Even after washing natually cooled down clay pot with water, it is to be dried in day light, so that germs gets away. Thanks and hope this tip is useful...
