Thank you! I think it's good to feature some less-known regional recipes once in a while. I really want to share more home cooking meals and some regional foods from Japan that are not known worldwide... I think we have enough sushi, tempura, teriyaki stuff. ;)

Thank you for posting this video! My husband's grandmother came from Kumamoto and sher used to make this every New Year. She passed several years ago, and I never learned how to make this. Now I can !

Hi Raini! I understand, some Japanese ingredients are hard to find. I want to still introduce the real and authentic Japanese food to everyone, as sushi, teriyaki, and tempura seem like the only "Japanese food" people think. It's my desire to share different Japanese foods that people encounter when they visit Japan. :)

This is so interesting! I love renkon and karashi, so I imagine I'd enjoy it. Thanks for introducing me to this dish, Nami-san! P.S. My father’s family is originally from Kumamoto, and I’d love to visit there someday. We lost touch with that side of the family because my ancestors moved to the U.S. in the 1800s. I keep wondering if I still have relatives there. Luckily, we're still in contact with my mom's relatives in Yamaguch-ken.

I'm sure your father's side of family eat this dish for the New Years! It seems like it's their tradition in Kumamoto. :)

Thanks for watching! It’s super unique but very popular regional food in Kumamoto or some parts of Kyushu. If you ever visit you would know right away. It’s sold everywhere at shops.

Interesting use of turmeric powder in Japanese cooking. While in Malaysia turmeric powder is like a staple ingredient in our pantry for Malay people it is. We use it to to marinate our fish and chicken before frying it which we call "ayam goreng" (fried chicken) and "ikan goreng" (fried fish). It is also uses in stir fry cabbages too which a common dish in Muslim Indian a.k.a mamak here in Malaysia.

It’s super rare to use turmeric in Japanese cooking too! That’s why this regional food in Kumamoto, Kyushu, is very interesting. Historically it was served to the shogun or someone (forgot exact person name) who was ill. Both mustard and turmeric have good effect.

It’s common in Asian cuisine. It’s such an interest ingredient isn’t it? I love lotus root texture - crunchy and delicious especially with tempura and deep fried!

Miso and lotus root, what is not to like.. Didnt know we could cook lotus root like this. We usually just boiled in soup at home.. Would try this week

That is quite an interesting blend of spices! Is the Karashi mustard really hot, or not so much? Unfortunately I can't consume spicy foods. So if it is hot, can you suggest an alternative? Thx Nami!

It is hot, but mixed with miso and other ingredients that it’s not red chili kinda spice. It’s more like wasabi style punch. You can totally omit it. 😊

Thanks for the feedback! This recipe has too many unfamiliar cooking steps to tell a clear story of the dish. Finding a balance / a sweet spot for both enough intro time and story telling is our challenge. 🙂
