Ms. Karen, It's a joy to watch you from up here in Connecticut, and we get to see how our great southern states do their cooking and it's a joy for me to watch you. How long did you have to cook those cube steaks to make them fork tender? I'm guessing about an hour and a half @ 325?? Can you tell us what that "Pioneer Gravy" powder was? I've not seen that before, thank you ma'am. Gardis

You are right. The pioneer gravy is just a brown gravy powder. I like to use it to enhance flavors along with a little balsamic vinegar. Try adding some of your leftover morning coffee in place of the liquid. Yumm 😋

This video feels deeply familiar to me and rings of childhood and a simpler time. I’m from Texas but your Alabama accent sounds like my family…your cooking reminds me of summer when my grandmother’s garden would be coming in. She’d cook the most wonderful meals like this one. We were required as kids to shell the purple hills. Only difference…in the summer there would have been sliced cantelope and frosty iced tea. The tomatoes and cucumbers were usually in small cubes mixed together with vinegar, salt, and pepper. I remember my grandmother cooking this type of meal as a big lunch and leaving the serving dishes with the leftovers in the middle of the table covered with a cloth to be eaten for supper that night. Nobody died so I guess the immediate refrigeration we do now isn’t completely necessary. I just found your channel and love it. I subscribed and am looking forward to watching more of your videos. You are a talented cook.

Oh, man, real cooking! I can *smell* everything, and it's wonderful. I hardly ever watch cooking videos because they're all the fancy junk, most of which is too much effort for the return, and doesn't taste that great. I grew up in the kitchen watching, then helping Mom cook, and this is the sort of food we ate. Not quite so many Southern dishes (we were in Oregon), but Mom's family in Idaho had come out West from the South originally in the 1870s. So the methods are the same! That, plus dishes she learned from Dad's mom, who'd been a Czech immigrant in the late 1800s. I've come up with several of my own versions of things she didn't cook, but was cooking meals by the time I was 9, and still make plenty of her recipes. From memory, of course. 😄 This reminded me so much of my earliest memories of playing in the kitchen while Mom cooked. Thank you for the flashbacks!

I learnt from my Irish Grandma, and she learn from her husbands grandmother, so I'm assuming this recipe goes back to the 18th century. But the Irish way to cook a "crumble" is without oats, and with COLD butter. The secret is to end up with little balls of butter, flour and brown sugar, and they get super crispy on top of the biscuit crumble between the fruit. That happens by rubbing and scrunching them together in your hands. The smaller crumble will top the fruit and the bigger lumps will go on the top. Personally I'm always disappointed by the addition of oats. We do Apple, apricot, rubarb, peach, or combinations of these. so good. 😊

Karen, thank you for you for this video. I have a question about the seasoning of the purple hull peas. You used butter. I use bacon, ham, or etc. to season any of my vegetables. What does the butter do to the peas? Make it have a buttery rich taste. Thank you for your response when you can.

I think it does. I love using butter. I have used bacon or ham. I'm just a butter girl. Thank you for watching.

Oh my goodness, when you put that okra in the peas I knew you were a southern girl. Love okra in my peas. This whole meal is one of our favorites around our house.

This is my first time watching one of your videos. My Grandma passed before I was old enough to teach me how to cook southern. So I’ve learned from cookbooks and people like you. Thanks so much.I’m going to make this same menu one day soon. Thank you

I’m not from the South but I enjoyed your video so much. I will try the cube steaks and the potato patties. I’m 82 years old, widowed but like to cook for my son and his family on the weekend. They will be so pleased. Thank you!

Only southerns gave cucumbers, onions, tomatoes with their meals southern to the core. I love it

Umbrella not so. My husband and I live in Wisconsin and we do that all the time. I think it depends on how you are raised. It's what my folks did. I learned to cook and serve meals from watching my mom in rural Minnesota back in the late 50s early 60s. I wish it was still like that. A simpler easy time compared to the way things are now. Rush, rush, rush. Not many families have supper together anymore. I loved our family suppers...every night like clockwork. Same time. ALL 5 OF US!!!

Looks yummy but too much salt and flour. That's too many calories.

But that's the good thing about cooking, you can adjust to your taste and preference. Thanks for watching.
