I have certain family members that we make plans and they are habitual no shows. It use to frustrate me, now I just don’t count on them or get my hopes up. Most of the time they didn’t even bother to call to say they couldn’t make it. I find it so disrespectful but I’ve learned getting upset over it only ruins my day as they couldn’t care less; if they did there would be a phone call and an apology. I also stopped inviting them to events so I could have an accurate count of guests to prepare accordingly.

Hey Karolyn I hope you will reply. I need to freeze cake wkth decorations on. Can I put it in a box and then wrap the box??? Will it make it 3-4days in the freezer? Will not the decorations go soggy? One of them Will be print on fondant. Thank you

You can wrap the box! Just make sure you wrap it a few times. Then, take it out of the freezer and put it in the refrigerator overnight the night before pickup to start the thawing process. The decorations shouldn't get soggy if you gradually thaw the cake. Don't bring it from the freezer to a warm room, it will be a mess! I would do freezer to refrigerator. Then from the refrigerator to an air conditioned room (if it's hot where you are). Try to keep the cake as cold as possible to reduce the condensation risk!

hi! i hope you reply🥹 if i just need to store the cake for two days( it’s a two tier stacked buttercream cake), do you reccomend boxing it up and wrapping the box and placing in fridge? or do you reccomend placing in freezer & letting it thaw in fridge overnight the day before?

I do this all the time, I would just keep it in a box, wrapped in plastic, in the fridge. Mine are always fine when I do that!

Love your videos and tips! Question for a buttercream one tier cake - If I were to transport the completed cake in hot weather for about 4-5 hours, would you recommend taking it out of the freezer and putting it in the car in full A/C? Worried about condensation but also heat if I let it thaw

I personally wouldn't transfer a frozen cake in hot weather because the temperature change is so drastic (even in an air conditioned car) and you could really have condensation issues. You have to gradually bring the cake to room temperature to avoid that problem. Think about it, when you have a cold drink with ice on a warm day (even in a house with the a/c on), you get condensation forming on the outside of the glass. That's exactly what could happen. Man, that is a long ride with a cake! Good thing is that it is 1 tier. I never did that (took a frozen cake and put it into an air conditioned car), so I'm not sure how it will hold up. But on the other hand, if it is frozen, it may travel better. I would say if you do it, make sure you have the A/C ON BLAST the WHOLE TIME, you'll need a sweatshirt to keep warm!

Hi Karolyn, I am so happy to find you. I’ve watched many of your videos. Have a question please, I committed to baking my son’s wedding cake. Due to time constraints, I intend to bake, fill, frost and freeze the tiers such that we just defrost them on the day. I watched your video on this (thank you soo much). My question is, since it is going to be outside in August’s heat. Should I take the cake from the fridge directly to the garden reception and skip putting it on the counter to get to room temperature? August on the South Carolina coast is hot and I don’t intend to use fondant as I have no experience with it (nor with stacking but I watched your video) Thanks again

Hi Sylvie! If you're going to freeze the tiers, I would thaw them the day before. Take them from the freezer and put them in the fridge and let it sit in there for up to 24 hours. Then, you want to GRADUALLY bring it to room temp from the fridge. If you take it out of the fridge and put it outside in the heat, condensation will form and it can create a mess! What I do is keep them in the fridge until delivery. My car has the air conditioning ON BLAST (I need a sweatshirt). The car is cold so the cake is gradually thawing on the way to the venue. When you get to the venue, it should be okay to sit out. Although I don't recommend letting a cake sit outside in the heat. Maybe it can stay inside as long as possible and bring it out a few minutes before it's going to be cut? Make sure decorations are minimal to reduce the risk of them melting or sliding off the cake. Thank you. It’s a 3 hours drive and we are driving 2 days before which is another reason for freezing. I was going to put the frozen wrapped cakes in a big cooler with ice for transportation then into the fridge for 2 days. I will set them on the counter and take it outside last minute as you suggested. She wants pearls on it. Wondering if I should put these on it before freezing or after thawing out in fridge. Any thoughts?

Hi Donna! I hear that people travel with dry ice around the cake. I personally have never done that, I try to avoid deliveries over 45 minutes away when it’s warm outside. I’m sure there are videos out there that can help you. Sorry I don’t have great advice for that!

Hi! Loved your video! I have a few questions. I'm planning making a princess fondant cake for a birthday party in advance, maybe 5 days advance the actual date. The issue I'm having is I dont know whether I should finish the decorated cake in fully covered fondant with buttercream filling to freeze or refrigerate in a card box as I have no space in my freezer? I'm worried about the condensation as I have never tried this. At the moment, I have freezed all 3 tiers but did not begin decorating with fully fondant as I'll be covering with fondant and decorating. How do I thaw out the frozen cakes? I want to complete the decorated cake and stick it in the fridge with cling film wrapped in a card box but I'm worried about the condensation and whether it can be refrigerated for a week or even less?

Hi! I freeze my cakes after I bake them, before I fill and ice them. So to thaw them, take out of the freezer and leave out on a table (still wrapped in plastic wrap) until they come to room temperature. Then you can fill and ice them. I ice most of my cakes on Monday for pickup that coming weekend, so they are iced and in the refrigerator for 4-5 days and I haven't had an issue with them drying out or anything. You want to make sure the cakes are completely iced or covered in fondant when you put them in the fridge so no cake is exposed and it's less likely to dry out. The only time you should have condensation issues is if you are in a hot and humid climate. If it is cool out, then that issue goes away. If you are in a hot climate, to avoid bad condensation you have to GRADUALLY bring the cake to room temperature. So take it out of the fridge and have the air conditioning so the room it is sitting in is cool. If you take it out of the fridge and leave it in a warm room, the cake will sweat. I hope that helps!

I have another question, whilst I'm decorating the fondant cake but didn't finish decorating yet, do I leave it out on the counter and continue decorating the fondant cake the next day or do I have to store it in the fridge? Also I may paint the fondant cake too so do i just leave it out on the table and come the next day to finish it. Thanks

@@Movie1374 I personally keep all of my cakes in the refrigerator. I take them out to work on them, then put them back in the fridge. This way, the butter in the icing stays hard and it's less likely to get messed up. If it's too hot where you are, the fondant may sweat when you take it out of the fridge. In that case, I would wait until it's room temperature and the fondant is dry to paint it.

Can you freeze a buttercream cake with fondant decorations? I made a frozen themed cake, but the party is unfortunately being postponed. I have not applied the fondant snowflakes yet. I’m wondering should I freeze the cake, then thaw, and apply the fondant decorations or can I go ahead and put them on and freeze?

I've frozen cakes with fondant decorations with no issue. The most important thing is to gradually thaw it before it's to be eaten. So The day before it's to be picked up, I'd place it in the fridge from the freezer. Then the day of pickup, make sure the house / car is air conditioned to control the condensation!

Hiii! I’m glad I found your channel. I have a question, I need to freeze my cake for seven days. It is inside a box in the fridge by now. It was also made today. Do you think I can wrap the box with clear paper and foil paper (while the cake is inside the box)? If so, what would be the process to unfreeze it? While it’s cold outside, we have the heater on inside. Thank you.

Hi Gaby! If I have to freeze a cake, I wrap it without the box and then put it in the box and maybe wrap it again with the box (like I did in this video). I feel like it protects it better. I'm sure you can just wrap it the way you described if you don't feel like taking it out of the box. And I go over the thawing process starting at 8:37 in the video 😊

Have you ever frozen a cake with hand painting on the fondant? Or maybe luster dust-based air brushing would react the same way? Does the paint look the same after freezing?

You have to be careful freezing a painted or airbrushed cake. It must be slowly thawed so condensation doesn't form. I haven't frozen a painted cake yet, so I'm not sure how it holds up.

Depends on the filling. Fresh strawberry filling...the fruit could get soggy as it thaws, some people don't recommend freezing them, some people do with no issue. In PA, we aren't allowed to put fresh fruit filling in our cakes (in a home bakery), so I don't have experience with that. Strawberry preserve filling or strawberry buttercream filling...that freezes well!

This cake looks epic! I have a question, can I freeze the naked cakes, thaw & decorate, then put the fully decorated cake back in the freezer? Will it ruin the taste or texture?

I usually freeze my cake layers before I fill and ice them. Doing that helps keep them moist, so I highly recommend doing that! I don't think it's necessary to freeze them as you're working on them. They have to go through a whole thawing process, so the fridge is the way to go. Also, when you freeze cakes and it's hot outside, you can run into condensation issues. If you have to make the cake a few weeks in advance, then go ahead and freeze it. But if you're just making the cake a few days ahead, all you need is the fridge.😊

You can freeze with fondant on it without any problem? What’s your recommendation about freeze decorating cake for travel 1 hours. How long should I freeze the cake? I have 6 and 8” and I am plan to stack the cake when I get there..! I don’t want the cake completely froze bc they are serve the cake that day when I get there. Thank you

I personally never freeze cakes before delivery. I only refrigerate my cakes. And I always stack and decorate them before delivery because they get soft when they are in the car and it's more challenging (for me) to try to stack cakes that are soft and susceptible to damage when handing them. So, unfortunately I am not sure what to recommend! If it is very hot where you are, then I absolutely wouldn't freeze it because of the drastic difference in temperature.

I’ve read that freezing cakes that have been simple syruped can cause problems. What are your thoughts?

I've heard that if you freeze it, the simple syrup could cause ice crystals to form. I never freeze cakes that are freshly sprayed with simple syrup. However, from my experience, I have have numerous customers freeze their cakes for a later date (simple syrup lightly sprayed on the layers and fully decorated) and haven't had any issues. It may depend on how much syrup you use! I prefer to spray mine on using a spray bottle, so it's evenly distributed, and I don't soak it.

Can I use shrink wrap & use the heat gun to seal it? To be able to ship the frozen decorative cakes. Or would plastic wrap be sufficient enough?

Hmmm, I've never done that, I'm not sure if it would mess up the cake or if it's necessary. I think the plastic wrap should be good enough. However, I have never shipped a decorated cake, so I am not sure what to recommend for that. I get nervous delivering them, I can't imagine putting them in someone else's hands! LOL

I don’t make cream fillings. But I’ve heard that they don’t freeze well. Mainly because when they defrost, it could make the cake soggy.

I have! And it tasted fine. And I've had quite a few customers need to postpone parties and freeze their cakes and I've gotten messages that they have all been good. Make sure you wrap it up really well and don't have anything with a strong odor (onions, garlic) in the freezer!

Yes, just make sure you wrap them up a few times in food safe plastic to protect them! Then I would remove from the freezer and place in the refrigerator overnight, the night before you will put the final layer of frosting on.

Hi Aubrey! I usually bake and freeze on Friday, fill on Saturday, ice on Sunday, and decorate Monday through Thursday for the following weekend. It all depends on your schedule. If you don't want to bake too early, you can start the decorations whenever you want, you just have to make sure that you make them the correct size so they will fit on your cake.

I would take it out of the freezer and put it wrapped in the refrigerator. Then take it out of the refrigerator and remove the plastic right away and leave it out to come to room temperature.

@@ODY0319 I used the #1 cutter that I used in this video kzbin.info/www/bejne/aqjZg6mYe6-ahdE but I made the back thicker so I could get a skewer through it. Then I just printed an edible image of the Rugrats, put them on fondant and cut that all out. Let the image on the fondant dry until it holds its shape. Then I adhered the image to the #1 with a little icing or piping gel!

Great tutorial! Question! I plan on making a cake for family and cut up in slices. I wanted to wrap each individual slice and deliver it to them like that...when I freeze the cake, then move it to the refrigerator, how soon do I get it to my loved ones to where they can unwrap the cake but won't mess up the buttercream when they do it?!

If you're cutting it in slices, you can remove the plastic as you take it out of the refrigerator. The slices will come to room temperature a lot faster than a whole cake! That's what I would do. And if you are in a warm climate, it will warm up even faster. If you want, you can loosely lay another piece of plastic on top of the slices so they aren't exposed to air and won't dry out. But the loose plastic will be easily removable and shouldn't mess up the icing. I hope that helps!

I just get them at a local restaurant store. They aren't 2 pieces, I cut the lids off and just use the box for the cake. I can't have a lid on my boxes because they are too tall. Here's something similar to what I get on Amazon so you can see what I buy: amzn.to/3PFJwue

Hey girl! I don't have a video on that specific topic. But in the warm months, I recommend you keep the cake indoors if possible until it will be cut. Just because if it does have to sit in the sun too long, the butter will melt! I've had people who need the cake outdoors the whole time and it must stay out of direct sunlight, so under an umbrella is best in that situation.

I don't remember, it was a few years ago! But I have had it happen in the past when they didn't pay in full and I made the cake and they didn't pick it up. So now I require full payment 10 days prior to pickup or I won't make it. That will never happen to me again!

By send a cake, do you mean deliver it? Or send it in the mail? When I deliver cakes (or when people pick them up), I always have the cake cold out of the fridge so the icing is hard and the cake is solid during transport.

Sure! If you wrap it up and thaw it properly, it should be fine. Make sure you gradually bring it to room temperature so you don't get condensation forming on the cake.

Hi i have a few questions. If I am making a fondant cake the day before. Can I wrap it with Seran wrap and just put it in the fridge or should be wrapped with extra protection in foil as well? My next question is can I not do a filling that is required to be in a fridge for a Fondant cake? I've heard that in general fondant cakes should not be placed in fridge or freezer. Thank you! I personally would just put the cake in the box (cutting the lid off the box if the cake is tall) and wrap the cake and box in plastic wrap and put it in the fridge. And I refrigerate all of my cakes. I have done that since I started making cakes in 2002. In the warm months, the fondant may get sticky as it comes to room temperature, but other than that, I haven't had issues with refrigerating fondant covered or decorated cakes. I hope that helps!

I'm still trying to understand when is a good point to remove the saran wrap without messing up the smooth sides for a decorated buttercream cake. I'm afraid the saran wrap will pull off when I remove the saran wrap. Eeeeek.

I think it all depends on how hot and humid it is outside. If it's cool weather, I'd move it from freezer to fridge. Then take it out of the fridge and let it sit for 20 min before I remove the wrap. If it is hot out, I'd let it sit wrapped up for at least 30 min to make sure no condensation forms on the cake. If it's hot, make sure you sit it out in an air conditioned room.

I don't ever freeze cakes that I am delivering. I always keep my cakes in the refrigerator and deliver them when they are just out of the refrigerator so the icing is solid and the cake is sturdy during transport. I only recommend freezing decorated cakes to save for a later date. I hope that makes sense!

I haven't made the cake as yet. But I want to frost and decorate it this sunday and the costomer will collect it next Friday. I normally refrigerate my cake after they're decorated but that only for a day or 2 at most. I never frost and store cake for more than 2 days. So Im worried if the cake will dry out.

@@kellyann9861 I use a doctored cake mix recipe for my decorated cakes. I bake on Saturday, fill on Sunday, and ice on Monday for cakes to be picked up that coming weekend. So I have iced cakes in the refrigerator for between 4-6 days and haven’t had an issue. If your cake is fully covered in Buttercream and / or fondant, it shouldn’t dry out that fast. That’s just from my experience.

Okay thank you so much for that info. I never store my frosted cake so long. So I was worried about it drying out. One last thing, do I have to cling wrap it and store it in the refrigerator or I can just put it in the cake box without wraping it?

@@kellyann9861 I never wrap mine, I feel like once it’s iced, the cake is protected. But you can wrap it up for a little more protection it wouldn’t hurt!

Well, they don't look like that anymore 🤣🤣 At that time, I was teaching (and taking) pole fitness and yoga classes, and working with a trainer twice a week. So I was working out like 8-10 hours a week! Now I'm much busier so I work out about 3-4 hours a week now. And I got injured, so I can't do pole fitness anymore. That in itself is an amazing upper body workout!

Do you have a quick tip for taking a small fondant cake on a plane. I’m traveling to a warm place, what happens to the cake once I exit the airport 😭 while Im walking to the car for example... I can handle the frizz on my hair☺️, but I don’t want the cake ruined. Thank you

Yikes!! I have no clue what to recommend, I've never taken a cake on an airplane. I'm not sure if the altitude / cabin pressure will do anything to it. I get nervous driving with one, I can't imagine a long flight and a car ride! Can you get a cake through security?

@@KarolynsKakes oh and I checked tsa and they said you can bring a cake. I will call the airline to double check! This is kind of comical to be honest. It’s a long story but it actually started with a mini mini cake that was going to be easy to carry.... but then it turned into this medium size came 😜

Hmmmm, I've never used mascarpone cheese so I'm not sure. I did a quick google search and you could have issues with it becoming grainy and it's recommended to whip the icing after freezing it to get it to a smooth texture again. So if you already frost a cake with it, you may have some texture issues if you freeze it.

It could, and also it's more susceptible to freezer burn or could absorb odors from other things in the freezer. So it's best to wrap it up really well.

I store my cakes in the refrigerator as I work on them. They are always iced in buttercream to prevent them from drying out before I put them in the fridge. And they only stay in there for no more than a week. If you need to store a cake longer than a week, I recommend freezing them and then thawing in the fridge.

@@amazingarmeen4981 I refrigerate all of my cakes with fondant decorations. If the cake is finished, you can put it in a cake box (I like to cut the lid off) and wrap it in plastic wrap. I have 2 videos on options to wrap your cake. You want to make sure you bring it to room temperature gradually so it doesn't sweat. You can freeze a fondant decorated cake if needed. However, it's not necessary to freeze unused fondant. Just make sure you wrap it up really well in plastic wrap, put in a ziplock bag, and store in an airtight container.

Thank you. I am not clear about the thawing part. Wouldn't thawing in the fridge with the plastic still on ruin the decorated cake? Why not remove the plastic first, then put cake in the fridge to thaw? I ask because my cake will be decorated with whipped cream frosting or cream cheese frosting with some small fondant pieces around.

I based this on the cake being iced in buttercream, which stays hard in the fridge. If you’re using icing that doesn’t set hard in the fridge, then yes, I’d remove the plastic before placing in the fridge. Totally forgot to mention that, thanks for pointing that out!

It should be ok to keep in the refrigerator for a few days. But if you need to keep it for longer than that, you'll have to freeze it or else it will go bad.

I have frozen cakes with edible images on it. The key is to SLOWLY thaw the cake. So, you must remove it from the freezer and put in the refrigerator overnight to start the thawing process. Then, once you remove it from the fridge, it must be brought into a cool (air-conditioned) room to prevent condensation from forming!

I know the top of a wedding cake will last frozen for a year but do you have a time that you recommend your customers for freezing a cake? A time frame that you guarantee it to be good if it is wrapped correctly?

I would say 10-12 weeks tops. But you have to make sure you wrap it correctly and that you have no odors in your freezer that could be absorbed by the cake.

I've actually had people keep their cakes in the fridge for a week if the party was postponed and they all said the cake was good! If it will be longer than a week, I recommend freezing it.
