Kashk-e Bademjan (کشک بادمجان) is a type of Iranian eggplant dip that is typically eaten as an appetizer. The dish is quite delicious and has wonderful flavor, aroma, and texture. Kashk-e Bademjan is usually garnished with crispy fried onions, Kashk (a type of Persian milk/yogurt whey), and fried dried mint; and, eaten with bread. Enjoy!
Ingredients
8 Italian Eggplants (بادمجان), medium
8 cloves Garlic (سیر), diced
1/4 tsp Turmeric (زردچوبه)
1/2 tsp Black Pepper (فلفل سیاه)
1 cup Hot water (آب جوشیده)
1/4 cup Crispy Fried Onions (پیاز سرخ شده)
1/2 tbsp Dried Mint (نعناع خشک)
1-1/2 oz Kashk (کشک)
Grapeseed Oil (روغن دانه انگور), as needed
Olive Oil (روغن زیتون), as needed
Optional
Pita Bread or Persian Bread (e.g., Sangak, Barbari, Lavash, etc.)
Additional dried mint, Kashk, and crispy fried onions for garnish.
