I make baklava often but have always been intimidated by Kataifi. Thank you for the excellent lesson. You make it look easy.

It is middle eastern, Balkan etc. All countries in those areas make some version of this either with nuts or cheese.🎉

I love this. I have been making this at home for years, and it remains one of my favourite desserts; your video is spot on and reminds me of the mess and troubles (that are sort of easyish) that are required to make this perfect dessert.

Looks delicious. Can we roll the whole thing and then cut into 15 parts, or will that not hold?

A few things: 1. Kinda difficult to say which ethnic group actually created this. The Turks largely forbade the Greeks from speaking Greek, for instance. It's also eaten by many ethnic groups, there's an old Persian poem mentioning it 2. With all the butter, no, it's not the healthiest thing-but understand that in actuality, it is NOT desert. The tradition of ending a meal with a sweet course, (desert), is not universal. It is, in fact, NOT a Greek tradition to have desert. Traditionally, a Greek meal might end instead, with fresh fruit, or Greek yogurt, which is often topped with chopped nuts & Greek honey, which IS healthy. 3. Kataifi is absolutely NOT SHREDDED FILO. That's a common misunderstanding in the U.S. Filo is flat like paper. Shredded paper is flat in cross-section. Kataifi is not. This is because it's not shredded filo, despite the lie on a box of frozen kataifi. Firstly, unlike filo, which is made from dough, kataifi is made from batter! Also, unlike filo, it is traditionally made by professional bakers, usually. It's a batter that is poured through a certain perforated utensil, on to a type of hotplate. A very fine stream is produced, that almost immediately is cooked enough to become solid, which is then quickly scraped off the hotplate before it can turn golden-brown. The partially cooked kataifi threads are then packaged, and sold to customers. It is also used for more than the baklava-type of pastry shown here. It is also used to make Kiunefe, (dipped in butter, skillet-fried, filled with cheese, soaked in syrup, and topped with chopped pistachios, for instance, and sometimes even for a savory dish.

In Egypt I had a slightly sweet roll of kataifi. I didn’t notice any cheese or nuts inside. Do you have any idea what that is called? I’d love to make it! Thanks for all your information!

In Turkiye we made this with one rule that one of syrup or kadayif has to be hot and other is cold when we mix them. We dont mix them when they both cold or both hot.
