Ingredients (10 to 12 pcs):
500 gr of all-purpose Flour (3 3/4 Cup).
150 gr of Butter or Mixture of Butter and Butter.
100 to 150 gr of Icing sugar.
1 Egg and 1 Yolk (70 gr of liquid).
200 to 300 gr of Molasses (I needed a little less than 250 gr).
3/4 tsp Baking Powder.
1/2 tsp Baking soda.
1/4 to 1/2 tsp of Salt.
For the Molasses:
300 gr of Piloncillo/Panela/Papelon/Chancaca/Panocha/Rapadura.
100 ml of Water.
1 medium piece of cinnamon.
1 star anise (optional).
⏩Tips and recommendations:
1. If you make the molasses in advance it will be very thick but don't worry, the only thing you have to do is heat it to make it more liquid and then add it, with that you make sure to use less quantity, in total I used 220 to 250 gr of Molasses but you may need less or more than I do, just remember that your dough should not feel dry.
2. You can cover them to decorate when they are cold with melted semi-bitter chocolate.
3. Leave your cookies alone until they look slightly golden and your kitchen is filled with their delicious aroma. They will still be somewhat soft when you remove them. Do not leave them until they are firm because then they will be hard.
