You can use regular all purpose flour. A specialty gourmet shop might have it.

Yes. I would try half and half first. Then go 100 percent. Have you heard of King Arthur white whole wheat? It is a white wheat berry. Less nutty.

I gotta say, salt stops the fermentation process. I always add salt after fermenting for 4 to 24 hrs first.

If you cook the pasta in properly salted water you shouldn’t miss the salt in the dough :)
