I feel your pain with the broken fins and having to weld the head. I spent days media blasting, machining, and porting a KZ1000J head once only to have it vibrate off the end of my workbench while I was using the bench grinder bolted to he other end of the bench. Some fins broke off, but worse was knocking off one of the intake port bolt hole ears. Up until that, the head was undamaged and "just perfect" (Millyard style) . I cursed myself out every time I looked at it for about a month afterward for not putting it in a safer place.

The way I set valves on a new shim adjustment assembly - Get a full set of the thinnest shims available for the installation of the cams (2.30's i think) - then measure clearances with the thinnest shims, calculate what shims each valve needs for spec clearance and install the correct shims. That's about the shortest path. I have found to do that with the shim under bucket type - to minimize how many times I have to remove and install the cams....
