Kūlolo or taro pudding is a classic Hawaiian dessert. Warm, chewy, rich, dark brown pieces of kulolo made easily in the comfort of your home using an Instant Pot. My favorite!
Kūlolo is a popular Hawaiian dessert here in the islands made of ground/grated kalo (see below for tips on grating) or taro, raw sugar, and coconut milk. Traditional kulolo is made in an imu or underground oven and steamed or baked for hours.
Today, kūlolo is often baked in the oven or steamed in a steamer. This process is very time consuming, however I have got a way to make kulolo in the Instant Pot and will cut your traditional cook time down.
***Of note not all varieties of kalo will work to make kulolo. Chinese variety of kalo (like Bun-Long) work well to make taro chips, but do not work well to make kulolo. Common varieties to use are mana and lauloa.

***Also the calcium oxalate in kalo can cause skin. If you have sensitive skin I would recommend using gloves when grating and handling the kalo.
Tips for grating kalo: Rinse kalo root. Using a peeler peel off the outer layer of the root (similar to the way you would peel a potato). You can then grate the kalo using a hand held grater (like the ones used to grate cheese) or an easier option would be to use a food processor or stand mixer with a grater attachment.

Instant Pot Kūlolo Recipe
Ingredients:
2 cups taro, grated
3/4 cups raw sugar amzn.to/37H9Xtc
1/2 cup coconut milk amzn.to/2Mts3GM
Directions:
Set Instant Pot to saute mode.
Line an 8 inch by 2 inch deep cake pan with foil. I have a 6 quart Instant Pot and this will fit perfectly. Be sure to find a pan that will fit your Instant Pot. Set aside.
In a large bowl add kalo, sugar, and coconut milk. Stir until well combined.
Pour mixture in to prepared pan. Cover tightly with foil.
Add 1 cup of water to the Instant Pot. Place trivet in the Instant Pot followed by the cake pan. If you do not have a trivet you can roll a piece of foil to elevate the cake pan.
Place the lid on and set to sealing. Press cancel to end saute mode. Cook on manual high pressure for 150 minutes. Allow natural pressure release until safety pin has dropped and the lid is unlocked.
Allow to cool overnight. Slice in to pieces and serve. Enjoy!

I am a Russian woman married to Puerto-Rican, and they eat taro as savory food in stews. I did not know such delicious desert can be made out of it!

Sorry for such rudimentary ignorance. I come from Central Asia, never even knew taro existed until I came to America and married a man of Puerto-Rican descent (they call it Malanga). I made this recipe with homegrown kalo. It was delicious! I still had a little of the scratch in the back of my throat but my wife and in-laws said they didn’t notice. Maybe I’m just sensitive. I’m doing another batch and added an extra 30 minutes to the cooking time to see if that helps. Thank you for the awesome recipe!!!

Thank you for taking the time sharing your Instapot method. This recipe reminds me of home. My father used to make ono kulolo with raw honey and it would get the crisped edge that everyone loved in my 'ohana. I wish I had asked about how he got that finish, I recall him telling me it's very easy. I will figure it out when I try some ideas I have in mind. I live in Texas and we will be moving back to the big island to enjoy our native home by December 2021. My fiance is Philippina and they do something very similar with Cassava. I have recently tried it with Cassava but ground the cassava to a flour consistency. It was good but I want it to be more coarse. I am actually about to do it this time going the grating by hand. I think this will turn out... I do a light modification with your simple recipe and sub sum of the brown sugar with honey. We shall see. ;) Mahalo Nui Loa!

Growing up in da' early 60's, my dad used to make imu-kulolo for luau's and I can tell you, "it's hard work" But, watching your video presentation, and since I do have small-kine Lo'i, and one Instant Pot, I'm goin' try it exactly the way you made it in the video. Wow i love kulolo, i just came from the big island and was trying to find it everywhere but just one restaurant had it. I need to make this! Im just wondering how to grate it without hurting your fingers

Same way you'd grate a potato or any other firm veggie. You can use a guard to protect your fingers if you are worried.

Aloha! So I made the kulolo using white sugar but the same amount and the same time. It came out a little mushier and not as firm as I would have liked it. Do u think I should keep it in for longer? And does it make a difference using raw or gran sugar? 😬😬

The sugar can make a difference. The type of kalo definitely makes a difference. Did you let it set until cool? If you try to cut it when it’s hot it’ll be too soft.

Mana or lauloa varieties usually. Recently I have been using lehua variety as it is easier for me to find. They all taste great.

Depends. The Chinese variety (the one with the purple specks used to make taro chips) are often sold in stores and that one doesn't work so well.

Aloha Relle! So I tried the Samoan taro and the taste was good but I thinkI need to grate it with a finer setting and use a chopper as well! The consistency was a little too chunky and some pieces weren’t cooked all the way through so it made my throat a little itchy when I ate it! Not bad for my first time, excited to give it another try! Mahalo again sis🤙🏽

Just bought Fiji taro cuz I have no idea where to get kalo here on Oahu. I guess going straight to the farms would be best but too lazy to drive out and idk which farm would sell right there. None of my 8in pans would fit so I’m going to grab the instant pot pan they have at bed bath and beyond. Will report on how it comes out

Never tried with the Fiji taro. I live in Maui. I get it from farmers markets, nurserys, or the kalo farms. What size IP do you have? Yes please let me know how it goes.

Fiji taro came out bomb!!!! Just like the stores. The only thing is that the color is brown. Doesn’t come out purple. I’m guessing they throw in food coloring. The store kine also puts preservatives in it. Grating it is also a pain in the butt. I used a 6 qt IP I couldn’t fit the 8in round pans so I bought the IP 7in pan and it worked good.

Hi. Sorry I know I should have included that in the video. You will need to peel outer skin off the taro (similar to peeling the skin off a potato). Then you can either grate the taro with a hand held grater like grating cheese or use a food processor with a grater attachment on it or even a stand mixer with the grater attachment. Then it'll be in the form that is shown in the video. Thanks for the question.

The variety of kalo matters. How small you can grate the kalo helps decrease cook time. Large chunks will take longer to cook. If not cooked all the way through you can put the kulolo back in and cook for a longer period of time. Hope this helps.

I have not tried it with cooked kalo. Not sure if it will work. It definitely doesn't need the same amount of time if you are going to try it. The length of time with raw kalo is long so you can break down the calcium oxalate that causes the itch.

Hi. You grate the kalo raw. What variety of kalo are you using? It is common for it to be slimy then grating. You can rinse under cold water. You can also use a grater attachment on a stand mixer or food processor if you have one.

The smallest grater hole size you have. The smaller the easier it will cook down and the less grainy it will be.

I haven’t done it this way, bud Id assume if the kalo is already cooked before going into the Instant Pot the cook time wouldn’t be nearly as long. And to be quite honest I’m not sure if it will work. If you try it please let me know.

Just curious I got raw sugar does it have to be brown ?? And for the taro I tried hawaii chinese taro cause I could not find anywhere here on Oahu, could I use a electric chopper for the taro or does it have to be graded??

Hi Ross. Doesn’t matter the color of the raw sugar. Chinese taro doesn’t work well to make kūlolo you can give it a shot if you’d like. Best to grate the taro so that it can cook down with the rest of the ingredients. I guess you could also try the chopper and see how it goes. Let me know how it works.

I have a question, when you remove your kulolo from the instant pot & you let it cool. Do you leave it out on your counter top overnight or do you stick it in the icebox? Just wondering mine taste good but it’s still a little runny & it’s sticky. What am I doing wrong.

I leave the foil on and allow to cool on the counter. What variety of kalo did you use? If it’s runny it sounds like there may have been too much liquid added or the water from the Instant Pot got into your kūlolo.

Good morning the store sign said Lehua. I really don’t know. But I did come across you taro chips video and you described the inside of that taro. And I remembered the taro I used had purple dots on the inside. So I’m thinking I used the wrong type of taro. I’m going taro hunting today. We love the taste but it’s just sticky & not firm like yours came out. Thank you for all your video post.

Try tossing it in a pan with butter and frying it. Adds a little crunch to the outside and cooks it a little longer. Soo good.
