Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Since they're mostly fiber, they are perfect for those watching their carb intake. When it settles in the fridge, it has a pudding texture and amazing flavor and lends itself to endless topping possibilities. Yum. I love chia, kefir pudding.. especially with red berries. I like the lemonade strawberry idea in bottom of the jar ❤

Hello Donna and thank you for this recipe. I have been making my own Keifer for over 15 years now and I make 2 cups every other day. My dog gets about 1/2 cup per day and I eat the rest. Every week I have to take out a few grains since they are very happy and proliferate like crazy and I give it to my dog that loves it. I only use 3% milk since I find it gives the creamest Keifer which I like thick like Greek yogurt. I have always used pure maple syrup, preferably the AA grade to sweeten, sometimes I use blueberry, blackberry, strawberry, and Haksap (Siberian honeysuckle) jams that I make from my own land (also made with maple syrup...since I live in maple syrup producing area and get if for practically free.) Allulose is banned in Canada and Europe..I tried it once in the States and it gave me such discomfort would not touch it with a 10-foot pole. Scary because it is commercially made in the USA from corn or fructose..the naturally occurring Allulose is hard to come by since it occurs in only small quantities in nature. Artificial sweeteners I never touch, my body dislikes them. I don't like the taste of Stevia. Maple syrup I use for everything and the taste it gives is amazing. Doing the Chia recipe today since I have a batch ready to eat. My immune system is strong, I had a head cold about 5 years ago and was the last time I was sick.

Have you ever made homemade kefir with grains ? The amount of $ you save is staggering; plus, then you can make and save a ton of $ on pure Oat and Coconut kefir ….. ; )
