Nice video Kelly! We do a simpler hobo pie when camping and they are fantastic. Two slices of white bread. Assemble them in advance with ingredients like pizza, Philly cheesesteak w/peppers and onions, pie fillings, ham and cheese, or whatever you like. Spray the preheated (hot) pie maker with PAM. Lay the “sandwich” into the pie maker. You can then put it directly into coals, but flip the pie maker every minute and check on it after the third or fourth flip. They should never take more than 5-7 minutes. Most important thing is to open it to see how it’s doing. The amount of time really depends on how hot your fire is. Try it, you’ll love it for its simplicity and deliciousness.

I got it! The best way to enjoy some ice cream is to do some exercises with a ball for 15 minutes.

You're a brave young lady to camp by yourself near a wild boar and alligators. 😮 Your camping adventure looks like a lot of fun and the food looks delicious. 😋 My grandchildren would love the ice-cream ball. 😉 That would make a nice Christmas gift. Kelly, wanted to let you know you inspired me to do my own solo adventures. I just got back from Florida a few days ago, I spent six weeks there camping, kayaking and so on by myself! I enjoyed all of it and can not wait to do more.

Having moved up to the mountains of NC recently, I do miss camping at Highlands Hammock. The N. Ga. State parks are fabulous though. 😊

You picked the best pie iron. Who makes it? Once it gets seasoned the pies won't stick so badly. In guaging the time and distance from the fire...think toast. Not roast. The ice cream act was pretty funni. That was good too. All it needed was a teaspoon of vanilla extract. And a tree ripened peach. Then it would be a ten or eleven.

I have a good chuckle when you pull up to entry gates where there are personnel you interact with, you have an inviting personality for one and its pretty obvious the men enjoy giving you a hard time ( another words flirting with you ), I am sure you've had a few good laughs over some of the situations. Nice campground, I like that remote area theme and looks like you had it pretty much to yourself.

Just down the road from that campground is Hickory Hammocks, one of a few free campground sites owned by South Florida Water Management. Has an awesome hiking trail that I think intersects the Florida Trail. Ice cream ball...what a concept...you can play with your food before you eat it. Fun video.

That’s a neat way to make ice cream, I usually do it in a mason jar with strawberries and put it in the freezer overnight. This way I know what’s in it.

Proud of you for getting back out there, even if it's just taking it easy. What happened at Wekiwa, especially considering your history of thru hikes all over the country, was unforeseen and I don't blame you for taking it easy the next few trips. I suffered from heat exhaustion twice back in 2008 and it took me years to get over my fear of being out in the heat. I carried a bottle of water with me everywhere I went as a safety blanket to help ease my mind. The unknown is the most terrifying part, especially since you still don't know what triggered it other than the bug bite. Your campsite this trip was beautiful, and I would love to make it out there one day just to watch the sunsets and sunrise. Thanks for sharing your trip with us!

I need one of those ice cream balls! Camp cooking videos are always fun for me to watch, I've always wanted to try similar pies but haven't had the chance to yet. Yours looked delicious! This video took me back to your first solo camping adventure before you did the AT, you are much more confident and seasoned now for sure! Glad you didn't have any health issues with this trip and hopefully you'll be able to get out and do longer trips again soon.

I hope you never experience that allergic reaction again. I had the same thing happen too me one morning when camping. I still have no idea what it was. Please please stay safe and I am sooo glad you aren’t letting that fear stop you! I did the same thing, I was back out in the woods hiking the next day, just with Benadryl lol

While you’re loving life in my home state, I’m traveling and soaking up the Fall colors. This year it’s Virginia/Tennessee/North Carolina - and so far I’ve done McAfee Knob and the Grayson Highlands. Hoping to hike from Indian Grave Gap to Beauty Spot this week. The BEST part is….I’m hiking with a local / new friend who I met this time last year on Roan Mountain. Next week it’s Hot Springs NC! I’m 61 - gotta keep these old bones moving! Girl that burnt crust looked soooo delicious! That ice cream ball will make a great Christmas gift for the grandkids! Great video, thanks!

I always loved highlands hammock one of my favorites along with myakka river st park. If you are ever up around Palatka Ravine Gardens St Park during Jan-Apr when the azealas are blooming is super pretty. Up in the panhandle of north florida a smaller park that is kind of cool is Falling Waters state park with Florida's only natural waterfall a 73foot fall where a sinkhole opened up beneath a creek.

Awesome video new camera is working well. I know Highlands Hammock very well It’s about an hour from me. I have a pic of my mother from 1949 of her standing on the catwalk. Nice place to go. I hope you clear out the webs of your medical scare. There is lots for you to see and do in the area

love the hobo pie maker - nice to have 4 way as us kids always had to wait with a single sandwich unit - may do better/faster in the coals but ya gotta check on 'em just the same. Kudos on getting out there - hard to push though when something spooks you like that.

Live inHighland Co myself. Love Hammock park! My sister and I camped at the Olive orchard near Brooksville last Dec after your recommendation. It was awesome too. Just booked us a glamping tent/trip straight Notrh over in Lake Wales at Kissimmee State park. Something so peaceful about camping. Great video! 😊

I love this. Your next calzone and pie will be better. Never saw an ice creme ball that's cool . I'll bet you get recipes from Dome life Kelly. Oh last May my daughter had an allergic at Ginnie Springs camping. Her lips and tongue was swelling so we called an ambulance. Never knew what triggered it but she got released later that night and continued with the camp.

You made me laugh at least three times. I too am going to try those recipes, probably in my oven at home. I'm always wondering how you get your shots, like the one where I could see both hands, & one from overhead. I live a couple of hours from there, so I might get down there sometime.
