I made two derby pies last week and shared some with co-workers who have never had one. Your recipe is like mine except I use half white and half brown sugar. Some times I use walnuts and 1-2 tablespoons of Kentucky bourbon adds a good note.

I did make this pie, and it was delicious. ..Besides the recipe, I learned that mixing flour in the chocolate chips and the nuts works beautifully to keep the chips and nits from clumping in the pie. I watched another video with that recipe having no flour into them When the cook cut the pie, there was a layer of choc, a layer of nuts, and a layer of sweet. Ours was much prettier. ❤

you are correct in saying that it is easy . . . . and also that it is good! about 30 years ago i had something called derby pie in a tiny tearoom in a tiny house in a tiny town in southeastern tennessee that has stayed in my mind ever since....this is not really that pie, but it is very, very good and everywhere i've taken it, it has gotten rave reviews! thank you!

You two just make my heart smile. I love how cute you are in the kitchen. I’ve always wished my husband would enjoy coming in the kitchen with me experimenting and cooking up great recipes but he absolutely wants no part of it. The kitchen is my happy spot 😊. During the days I went through chemo we about starved because all he knew how to do was open a can of soup and microwave it. Now I’m doing good and try to gently nudge him to come help me but he’s just not interested lol.

Pie looks delicious. I love the Kentucky Derby. My husband used to drive an 18 wheel truck to Churchill Downs and pick up straw that had been used by the horses. He would then bring it here in Tennessee to the mushroom farm for use there. He retired but loved that run every day.

So my derby pie is in the oven!! Hardest part is fiddling with the pie crust. I kept hearing your voice in my head saying it’s ok if the crimping isn’t perfect. That was encouraging as mine looks like a kid did it. Then some shrank right down into the filling. However, it smells heavenly, looks good, just not pretty. But this is my first attempt. Hello from Washington State 😊 I wonder if you have heard of another way I learned to check the freshness of eggs? I fill a clear measuring cup to between 3/4 and a cup with water then I place one egg at a time in the water and if the egg floats it's bad🙂. Just wanted to share that with everyone 😊

Yes, if I have any inkling that an egg is old or might be bad, I do the “float test”.

Floating doesn’t mean it’s bad, it means it’s older. As an egg ages, the air pocket on the large end expands, causing the egg to float. Floating eggs can be bad, but they aren’t always
