I tried this recipe the other day, and it is a universal hit in the house! I can't see why anybody wouldn't like it, but there's no accounting for taste. Everyone said couldn't tell it wasn't made with sugar. My next batch is going to be six pints, if I can find the blueberries at a decent price. I did add a good bit of liquid Splenda, as I wanted it somewhat sweeter. I figured to be 1.22 net carbs per tablespoon, counting chia seeds and erythritol as zero. Question: Since the erythritol is fully melted, it seems to me that it wouldn't make any difference whether granular or powder. What do you think?

Made this delicious jam today. Only added 1 T vanilla though. Next time, I probably will not add the vanilla. It tempered the blueberry lemon top note. But still wonderful.

Not at all! Leave it out, if you like. Always sweeten--or not--to taste, of course. The sweetner, here, does not help preserve the jam. I freeze it!

Glad you like! It doesn't! At least, not in my experience. Of course, you can use powdered erythritol or stevia or a liquid sweetner if you like. If your blueberries are sweet enough for your taste, you can leave the sweetner out altogether.

Tim, I’m not big on chia seeds. Are you using them for thickening purpose? Can you taste them in the jam or do they sort disappear when you blend?

Hi benatalya! They are the thickening agent here, in fact. They do sort of dissappear in the dish, but you can grind them up into a powder so you don't even see the. You could also use unflavored gelatin instead. Hi again! Yes to both! If you don't puree it mechanically, it will be chunky and you might love it that way! You might want to mash it up with a potato masher to make it a little smoother but maintain a more rustic texture.

Hi Bree! They have some carbs, but not nearly as much as other fruit, so you can enjoy them in moderation. The serving size here is 1 oz (28 g), which is 2 tablespoons. It has 22 calories 3.2 g net carbs. Is that a lot? You have to decide that for yourself.
