Hi Ludmila THANK YOU for this recipe and the step by step instructions I have tried several other youtube keto jam recipes but they do not look anything like yours when done and are not done the traditional way this is GREAT and I will make this and will do it like you have demonstrated. Can I do this method with strawberries and Raspberries? I hope to try to make your rustic bread soon Please continue posting these great instructional videos and thank you - Julianna

Thank you! Yes, you can make strawberry and raspberry jam, too. You don't need to add lemon juice with strawberry and raspberry jam.

Beautiful jam. Thank you for sharing this recipe. I make cranberry jam at Thanksgiving/Christmas. It’s delicious too. I’m going to have to make me some blueberry jam now!🥰❤️🕊️

Thank you so much for sharing this. I am following Keto and berries are fine but not all the extra sugar in a jam normally. The sugar free jams in the grocery store are all horrible and are thickened with gelatin. They taste horrible as well. I love that you are using the fruit and juice for the flavor I love already with just a little extra sugar substitute.

Hello, thank you for your recipes. I’m really enjoying them. With your jam, can you replace the pectin with gelatin or is that completely different? Sorry if my question is a dumb one, I just have never made jam before so I wasn’t sure. Thank you so much. Have a blessed day.

Glad you are enjoying my recipes! Unfortunately, with this jam recipe, you can't just replace the pectin with gelatin. Pectin needs to be cooked to be activated, but by boiling gelatin it would actually loose its thickening qualities.

@@lowcarbabode ok thank you very much for your reply. I followed one of your cookie recipes today, they worked out great! But I just made your waffle recipe. I didn’t get the same result. They were very good, they just didn’t get that little crunch yours got when you tapped them with the fork. Mine stayed very soft. And although I used all the same ingredients as you did, mine did not inflate. Do you have any suggestions or thoughts as to why? I’m really looking forward to trying several of your other recipes….. Thank you

I'm going to give this a try today. Perfect recipe since I have all the ingredients available. Basically I'm going on a jam cooking frenzy here for a week to use up my fruit supplies. Can you tell me if lemon juice will be needed for nectarines, peaches, grapes, figs and dates? A year shelf life is amazing! Have you ever tried freezing your jams and if so what was the result?

I think they all of those need lemon juice. With grapes, figs, and dates, I would look up separate recipes because as far as I know these fruits don't require pectin. I haven't made freezer jam.

And another question. I do have a vacuum sealer for my canning jars. Can i use that instead of using the boiling process to seal the jars? Finally, how do you know whether you need to add the lemon juice or not with the fruit you are using? Is there a guide somewhere you can point me too? I see you have bread as well... I am so excited to try your recipes!

Lemon juice depends on which brand of pectin you use. So with Ball, they only require it for blueberries, sweet cherries, and peaches (and I'm guessing nectarines because they are similar). So just go with what your pectin brand tells you (it's usually written on the package). No, with this recipe, you can't use a vacuum sealer. The boiling process is necessary to sterilize the jam and the jars. Hope this helps!

I think either works. I would thaw a bit first to save time cooking them.

The acidity level in bottled lemon juice is standardized. You always get the same acidity. Fresh lemons can vary in acidity. Since you want certain acidity for your jam, that's important. Having said that, I have run out of bottled lemon juice before and used freshly squeezed lemons and it worked out well, too 😃
