2 cups crushed pork rinds (I used plain salted flavor) 1 stick melted butter (I used salted) 1/2 cup allulose 12 large eggs 1 cup cottage cheese 1/2 cup sour cream 1 tablespoon vanilla extract Mix all ingredients in blender until smooth Place in a parchment lines 13x9 bread pan Mix 1/2 cup allulose and 1 tablespoon cinnamon together and swirl into the bread mixture. Bake at 375 for 55 minutes or until a toothpick comes out clean. The bread will still look jiggly but if a toothpick comes out clean, its done.

Think it might make a good bread and butter ( custard) pudding. You certainly know how to improvise..that’s how all good recipes come about.

I am wondering how the carnivore / keto diet works with the fermented foods ? Doesn’t it throw it off as a fat based energy source?maybe toast it ?

Fermentation actually lowers oxalates found in vegetables so they work great with a keto diet. I only eat a tiny amount so that I can increase the good bacteria in my gut. This particular bread pudding recipe can fit into a keto diet but I wouldn’t consider this recipe to be carnivore.
