Wholeheartedly agree, wouldn’t it be nice if we could all take a coffee break together. I remember my mom would do that with her neighbours they would all bake in the morning and in the afternoon come around for a coffee break and share what each made that day that would hold a couple back for what they would have for their family and share it with their ladies that they went to coffee break with each day it would be a different home. Those were the days when mothers stayed home and raised their own children and their husbands were able to make enough income to support the family. How times have changed even some dual working couples are struggling to support their family’s needs. Anyway nice to share everything here and all the wonderfully creative ideas.🥰🙏🏻🇨🇦

I have all my supplies for protein sparing modified fast bread in a box. I bring the box into my kitchen pull out the list items and measure everything out. It’s so handy. I don’t have to run around and search for everything

But it’s all healthy foods I don’t have any garbage in my cupboards. And white garbage I do have is rarely eaten. We have some crackers that are so healthy. I even keep my measuring spoons and cups in that box

just made a loaf similar to pumpernickel by adding some instant coffee, cocoa and caraway seeds. you don't get the rye flour taste but it's close and my hubby likes it...and that's all that matters.

I use my ice cream scoop all the time to portion meatballs and used to do it for keto cookie and muffin doughs, but never thought of using it for keto buns. What a GREAT idea! Thanks for passing that along. So much easier than dealing with the silicon bun pans, and so pretty!

Even if you still use the silicone bun pans, the ice cream scoops make it much quicker and “cleaner” to portion out the batter and the buns are so much prettier. I would even use it for the oblong bun pans using two or three scoops to load the batter and then smoothing them out.

I ususally just use whatever small measuring cup I have already dirtied measuring out the ingredients. A 1/3 or 1/4 cup measure works great for the filling the silicone bun pans.

I made these for the first time last night. I wasn't sure if my scoop was 4 Tbsp, but I think so. I have a set of 3 scoops, and I used the largest one. I got 19 buns out of the recipe (leveled off the scoop for each one), but I didn't quite get the egg whites whipped to a stiff peak. I don't have a stand mixer so I used a hand mixer--the batter kept wanting to climb up the beaters to the mixer so I finally had to stop after scraping it down a few times. Anyway, they were really good! Just as-is, they were ok, but with salted butter...delicious. I had 3 this morning for breakfast. Planning on lunch & supper too. Already thinking of when I'll make them next, and whether I'll try using silicone molds and making other sizes & shapes.

I did exactly as you did here. My batter was thick and sticky and nasty. It did fluff up but I think I need to try one egg at a time instead of all together. The second batch I made without the xanthan gum and was much better. My problem was all three patches fell. I let them rest in the oven like you’re supposed to with it off and they still fell flat. They look beautiful going in and then they just fell

You could use a mat for sure! Probably when I did this video either I didn't think it would be large enough for the pan, or maybe it was just waiting to be washed! I can't remember!

Anita Breeze... have you found these breads and rolls have a definite eggy taste and smell even the next day? I even tried Janet's recipe with only 2 egg yokes. Any suggestions? Maybe I'm doing something wrong?

For me the eggy taste disappears pretty quick! I'm not sure if brands matter or if any one ingredient makes the difference or not! So I'm not really sure what to suggest. All I know is that I will probably stick to this combination of ingredients going forward. But I did forget to add nutritional yeast, I do prefer the flavor with NY added.

Thank you so much for this video. I tried the Hawaiian rolls once with xylitol and it turned out terrible. So I have ordered some allulose but I don't have a stand mixer. Can I use a handheld mixer and get the same results?

Yes, I used a hand mixer for the PSMF bread recipes for months! Depending on the recipe you might have to make 1/2 recipe. The allulose is the way to go for these bread recipes.

ANITA! These were awesome & so easy!!! I didn't use the caraway seeds but instead made them more of an Italian roll like your bread. My husband said, man those are good - they were a little warm from the oven still. I am planning on freezing a couple & put a couple in a baggie on the counter & the remaining I'll put in a baggie in the fridge to see how they are a few days in advance & whether reheating will be okay. Any ideas on the reheating?

Right after the caraway buns were gone I made Italian buns too! I haven't even tried to reheat them actually I just love eating them as is. I would think a toaster oven or air fryer will be the best bet as they will get lost in the bottom of a regular toaster!

Have you tried making them without any sweetener/allulose? Just thinking of my dad, who can't have artificial sweeteners (I know allulose is "natural", but it is still artificially made/processed, so he might still have trouble with it).

I normally do but forgot to put it in and it was still good! But I think it tastes better with the nutritional yeast and I would have used 2 tbsp in this.

Anita, thanks for sharing! I have planned on making the Carnivore Angel's Hawiian rolls for Thanksgiving. Curious though, do you think the tops of your caraway buns could be brushed with melted butter right after they come out of the oven? I'm thinking I'll try that and like you are having issues with getting enough fat in so the additional butter will help with that--maybe garlic butter?

Yes use whatever you have on hand! I guess grinding it is a personal choice, maybe try it without grinding first to see how you like it!

mine did not turn out okay :( this is my first ever deflated egg white bread batch (I have been making them for months though) so I guess it had to happen at some point hehe here's what I learnt, for anyone interested: -its most likely because the method of mixing all dry and wet at once is not conducive for us folks using a hand mixer, I got not even 1/3 of the volume in the video despite best efforts, next time I will fold the drys into the wet after aerating the egg whites to max volume - I probably suck at using volumetric measurements, I am going to convert everything to grams myself before trying future recipes - this is the most cream of tartar an egg white bread recipe has called for and it turned my bread kindof sour, I guess they differ brand to brand so I am sticking to half a tsp in the egg whites while aerating

@@KetogenicWoman I really wanted to give this recipe another shot so I just made a second batch, the hand mixer was the issue as I had guessed! The only thing I did differently was beat the liquid egg whites to stiff peaks first before adding the precombined drys and I had more batter than I knew what to do with hahahaha! It's in the oven now but I can already tell this ones a keeper for sure

after adding yolks - the butter was so runny they would not form buns. And YES the whites were extremely stiff prior, and yes one yolk at a time. help

That's an impossible thing for me to figure out without actually seeing what/how you do it! The whites need to be so stiff that you can turn the bowl upside down and they don't fall out. A very light touch is needed on incorporating the yolks so maybe that is where it is failing? I don't have a visual so not sure what's wrong. Sorry!

I have yet to be able to obtain egg yolk powder where I live so it's not something that I can really answer for sure! In theory it should work, I'm assuming you mean to reconstitute the powder with water.

heyy!!! I tried making this today from maria's page recipe. I added the nutritional dry yeast. When i tried to beat the eggs stiff (after adding all the dry ingredients). it just stayed a liquid mess, didnt rise, didnt stiff, nothing :( any idea why? did i use the wrong yeast?

What other dry ingredients did you use in the mix? I use nutritional yeast with no issues. Did you watch this video? Or Maria's? I didn't know that Maria made these. Maybe she used something different? Have you asked her?

@@KetogenicWoman I used instant yeast! I think it’s different then the nutritional yeast. You put very little in your recipe. Maria puts 2 tbsp. The rest of the dry ingredients are the usually egg white protein, allulose, salt

I recently made Maria's bread recipe where she includes nutritional yeast. The whites didn't get as high as they usually do. I think it's because the egg whites should be whipped first with the cream of tartar till they peak then add the dry ingredients. Don't overmix after adding the dry ingredients as the whites will fall and it'll make your bread too dense.

I just bought a big 16 oz container of caraway seeds from Amazon because I wanted to try and create something that reminded me of the rye bread from my favorite German bakery. Your recipe is so timely! After tasting your buns, do you think you would adjust the caraway up or down?

@@KetogenicWoman they also have sourdough flavoring which I plan on ordering. It’s worth keeping in mind that Wendy from Loving it on Keto thinks the egg white batters “soak up” or dull the flavorings you add to it, so you might have to add more than you think.

So I found some other suggestions to get the rye flavor, one suggested adding unsweetened cocoa powder and another said to add instant coffee. Another subscriber on Loving it on Keto with Wendy, is thinking of adding 1 tsp of each and see how that comes out. I think it’s worth a try!
