I made this two days ago and WOW! Definitely the BEST keto--or even non-keto--pound cake I've tasted. I used the vanilla, but opted for almond extract instead of the lemon. Easy to make, the texture is perfect, and the cake isn't overly sweet. You have made me very happy with this recipe! I'm putting all your recipes in a file of their own, that's how great they are. I have one in the oven as I write this. I doubled the recipe and pour it in a bundt mold. We’ll see how it comes out. I do the regular version with flour with my eyes closed. But since I’m doing keto for two months now I can’t. I’ll write after! Back from the kitchen! It is delicious!!! I made a glaze with half a stick of butter, 4 ounces of cream cheese, 1/4 teaspoon of vanilla and lemon flavor each and 2 tablespoons Truvia!!! OMG!!! You wouldn’t know is keto! Sooooo good!!!! Mine is in the oven and I can't wait to try it,I also substituted the lemon extract for almond extract, I will let you know how it turns out,I also made the cinnamon coffee cake loaf and it was delicious,I made the chocolate chip cookies with the coconut flour OMGosh they were so good,next will be the pecan cream cheese cookies,I have been a professional baker and cake decorator for 40 years I have been around cane sugar and wheat flour my whole life,but I developed fatty liver from that diet,so I needed to make a change to heal my liver and so I went keto 4 months ago and I have lost 55 lbs. So my new venture will be perfecting keto desserts

Rara Avis, you should see the toppings that I use regularly on stuff like that, on the keto diet. You have to keep your fat intake high. And this a very good and creative way to get your good fats in. Otherwise you will loose so much weight till you vanish 😂.

Hi I cooked this last week I thought it was dry this week I added 1/2 Avocado and omitted the butter and added and extra half of a block cream cheese and it was fantastic!

I made this tonight. Used coconut sugar (not sure if it is keto?) and the almond chips came out very toasted, not like yours. Love it and enjoy the cake a lot. Thanks for this wonderful recipe.
