They look awesome! Reminded me that I've some tahini in the fridge. Your tahini sauce is similar to how I make "fake hummus" - Greek yogurt, tahini, lemon juice, garlic (fresh or granules), salt, pepper, maybe some chopped parsley or cilantro, mixed up in a bowl. It comes out thick and as nice as, if not better than, "real hummus". I also like tahini in chia pudding.

The texture before I added the sour cream reminded me so much of hummus and I miss hummus loads so will have to try your recipe! I recently bought some chia seeds but haven’t attempted chia pudding yet. Do you have a specific recipe for yours? Would love to try it!

@@SuzAndTheCrew Chia pudding is one of those love it or hate it thing, mainly because of its texture. It's gooey and crunchy at the same time. Personally I love it. I don't eat desserts often these days. When I do, it's often some sort of chia pudding. But I use dried fruits (a small amount) instead of sweeteners. We do low carb, so I'm alright with 10-15g of carb from dried fruits (raisins or dates usually). For two very generous servings I use 40g chia seeds with 240g/ml of liquid in the form of vanilla almond milk + cream (20-40g cream, depending on how rich I wanted it, the rest milk), basically by weight six times the liquid as chia, with 30g or so of dried fruits. Of course you can use sweeteners instead. I might decrease the amount of chia if adding other things like tahini, dried coconut, cocoa powder, ground almond, sesame seeds, cream cheese etc. I've also used coconut milk instead of almond milk for a very coconut-y one. It's very flexible to be honest, no need to be very precise with the measurements imo, and just add whatever you like to your taste. You can make it the night before (refrigerated). I've found leaving it at room temp for an hour or more to be sufficient (slightly crunchier seeds which I like).

Thank you for this! It sounds kinda like making overnight oats. I might try making it with berries and coconut. Cream cheese sounds amazing in it too (I’m sure that makes it more dessert-like 😋). I think I would like the contrast in textures as well.

I never have a problem finding pepper jack cheese; you might use one can of green chilies and pepper jack instead of the Monterey jack.

Also, rosemary and/or basil are also good herbs for fish. They're bold flavored, though, so use carefully.
