Yes! I’m hoping we get another little cool snap here so I can enjoy all the chili, stews, and soups (as I don’t really like having them in the summer), but alas it’s already in the 80’s here this week! Thanks for the compliment! I have been using Dashing Diva’s gel polish nail wraps and they are phenomenal! I am constantly cooking/cleaning and dealing with toddlers’ messes and they hold up so well and are pretty affordable for how long they last me.

I love cooking with ground beef, so versatile and cheap. All four dishes look fab. One pot cooking is more of my style (lazy), will get some chili con carne powder and make a beef chili. :)

I love ground beef too! Easy dishes are my favorite; that chili turned out terrific! It was the first time I’ve ever added celery to a chili so I was a little skeptical but it added just enough texture and just the right amount of flavor.

@@SuzAndTheCrew I think I have only ever made chili once or twice years ago. My husband used to suffer from heartburn and was advised by the doctor to avoid spicy foods, so for a long while I avoided making spicy dishes. But since going low carb more than a year ago, no more heartburn for him, and most of our meals these days are spicy :D. Not sure why I haven't gotten around to making a chili yet though, but definitely will give it a go. We don't have Rotel here, just use regular tinned chopped tomato in its place?

That’s great that his heartburn has gone away! We love spicy food too! I often use a can of chopped tomatoes along with a small can of chopped chilis, in place of Rotel. It’s pretty much the same thing and works out way cheaper!

@@SuzAndTheCrew I haven't seen cans of chili in the shops here... We have pickled chilis, like Mexican style jalapenos or Turkish style ones. Oh well, I'll just throw in some jalapenos and bell peppers and call it the Anglicized version. :D

How in the world do you get so deep into ketosis? I’m lucky if I get over a 1.0

It’s not easy, Joe! I’m usually somewhere in between a 1 and a 2. I wanted to go a little deeper to drop a few pounds, as I normally am just aiming to maintain. That took me about three days of super clean eating. Coffees with a cashew and mct oil based creamer, during the day, eggs scrambled up with another protein and some butter for lunch (shredded pork or chicken) and a small portion of whatever I was cooking up for dinner. Ideally, most people want to be at about a 3 for losing weight and don’t want to stay at a 4 or 5 for too long.

My lasagna meatloaf erupted out the cheese, even after waiting an hour after cooking. It never solidified.

Oh no! You saw how mine erupted while cooking! Some of the cheese also oozed out while slicing but I figured my knife was just too dull. Hoping yours still tasted as delicious as mine did!
