Adding a couple tablespoons of melted coconut oil will actually help it from freezing too hard. It will bind and emulsify the components together while at the same time not let it become like a brick. It will be a firmer ice cream but you can still get a spoon through it and it gives you some necessary fat for the diet

You can also add 1/4 tsp xanthan gum to help with the consistency! Zero net carb there too! I used it in mine today and it’s SUPER CREAMY!! 💜 HTH!!!

I lived in Hawaii for 16 years and have been craving coconut macadamia ice cream. I substituted 1 tsp coconut extract for the vanilla extract and seeds. I used allulose instead of swerve to prevent freezing. I added 3 tbsp toasted, unsweetened coconut. I added 42 grams macadamia nuts cut in 3rds. As Larry David would say, " pretty, pretty, pretty, pretty good". Edit: I wrote that after a taste test before it was totally done. After 4 1/2 hours though, it's hard as a rock and all the nuts are at the bottom. I didn't have those problems with the butter pecan recipe. I guess I will try the mct oil next time.

If you exchange your sweetner for xylitol it will keep the texture permanently soft scoop ! Also if you are non vegan add an egg yolk or two for a very creamy texture ! Very many thanks for all your help xx

I will NEVER buy keto ice cream again after trying this recipe. THANK YOU! … I read all the great comments and decided to try it. I used 1 Tbls of MCT to keep it soft and creamy. I used Swerve confectioners sweetener. I didn’t have vanilla bean or the protein powder. I just used the vanilla extract. Next time I will use vanilla bean, I’m sure it’ll even taste better! To prevent the ice cream from getting excessively hard, add a splash (tsp or so, experiment with it) of vodka. Sounds crazy, but it will make sure it is never too hard to scoop, and you shouldn't taste it at all.

Joe this was amazing! I didn't have vanilla bean but did have the isopure on hand and got creative and tossed a heaping spoonful of NO SUGAR peanut butter; a teaspoon of cocoa powder and since i didn't have a mason jar I whipped it up in my Magic Bullet...you will be saving me money since I won't have to buy Halo brand ice cream anymore. I've made ice cream in my Nutribullet too! I like to rewhip it a couple times about 30 minutes and an hour in to the freezing process. That breaks up more ice crystals.

i have to say i just did this recipe today, with the same exact ingredients, and it was worth every penny, it was identical to traditional ice cream in sweetness and texture, homerun, on top of that i have two large spoons almost scoop size, but i still have 3 times that amount left, enough for a few more ice cream days, by far the best keto recipe for ice cream in the world. very easy.

Made this yesterday. It was good but definitely needed more vanilla. Both more extract and beans. I would say between 1.5 to 2 more times both. Without it it just tasted like frozen whipped cream with a hint of vanilla. I also only used 2/3 the confectioners sugar and it was plenty sweet. Thanks for the recipe!! It was super easy and I plan to make it again with more things added next time!

I would first off like to thank you for all the amazing recipes on this channel. I've tried Keto before but it was with store bought products and I couldn't stand the taste after awhile. I know everyone's tastes differ on sweetener but have you ever looked into or tried Sola? While a lot of products say they taste like sugar Sola was the only one to me that actually did. It only comes in granular but I had a small gift coffee bean grinder that we never used that turns it into a fine powder in one cycle. I made your recipe and tweaked it with some unsweetened vanilla almond milk (can form ice crystal in the ice cream)then upped the Sola to 30g and finally 1 1/2 Tsp of spice supreme imitation vanilla extract. I was looking for a cheaper alternative to the real stuff and it turned out so amazing, I'm glad I did. I can't get over how real this tastes and with fall coming on I just started playing with the pumpkin spice extract... Thank you a million for recipes that make Keto easy!

I made your ice cream recipe, but I used a little pint ice cream maker. It was the perfect size for a cup of cream. I only added vanilla extract and the ice cream had a nice vanilla taste. I used the same sweetner and amounts you did. The ice cream was very sweet and very tasty. I have made ice cream with only cream before. It is delicious. The only problem is the amount of fat one can feel on the roof of the mouth. With all cream there definitely is a fat layer. That's the only down side.

Be sure to read the ingredients in your whipping cream. Three grocery stores I went to including Costco had additives to the cream they were selling, such as Carrageenan. Not good. The one I eventually found in another grocery store was in an old fashioned glass bottle with one ingredient in it: cream. Now for the happy dance! 💃

Hi, Joe! No idea if you spend any time looking at comments for old recipes, but if you keep an eye on things, I'd like to run a scenario by you, and see if you have any thoughts on it. I've been making several batches of your mason jar ice cream, including several flavors of my own, and they've all worked great ... until tonight. The batch I made tonight, though I shook it for 15 minutes, it just wouldn't come together. I was making my second attempt at a sort of an orange dreamsicle flavor. Ingredients were two ounces of orange juice, 8 ounces of heavy whipping cream, a tablespoon and a half of allulose (trying it via a few suggestions to keep the ice cream from freezing so hard, but slightly lighter amount, since orange juice is rather sweet), 1/2 tea orange zest, 1/2 tea vanilla extract, 1/2 tea orange extract. After 15 minutes of shaking, it was the same volume it had started out as, rather than expanding, as it usually does. The last batch I made was lemon ice cream, with some lemon juice in it to add to the flavor, and it worked just fine. The only new thing with this batch was it was the first one to use allulose. I'm just going to hate it if I've wasted something like $12 on this allulose, and it won't actually work, for some reason. Any thoughts as to likely problem?

could you do a classic custard base ice cream? (custard = French style with egg yolk). Erythritol doesn't form the same soft confectionary blend as sugar. maybe egg yolk as an emulsifier (and is very nutritious) will be a good way to solve that problem.
