I halved the recipe and didn't use a crust, plus I was missing nutmeg so I substituted ground ginger and pumpkin pie spice! It was so light and fluffy which is why I named mine Fluff! Below is the halved recipe for those who want a smaller amount. Enjoy!
Ingredients
1/2 C Heavy Whipping Cream
8 oz Block of Cream Cheese
8 oz Pumpkin Puree-unsweetened!
1/4-1/5 C Powdered Sugar Sweetener (Swerve brand)
1/2-1 t cinnamon
1/8 t ground ginger
1/4 t pumpkin pie spice
pinch of salt
Instructions:
1. In a medium bowl, beat heavy whipping cream to stiff peaks.
2. In a large bowl beat cream cheese until light and fluffy. Add pumpkin puree and beat until no lumps remain. Add powdered sugar and beat again. Add vanilla, cinnamon, ground ginger, pumpkin pie spice and salt and beat until incorporated. Add whipped cream and fold in until just combined.
