We just made this using walnut flour instead of almond flour (more available in Europe). It was very nice indeed. The method to make it thinner worked perfectly. We will make it again for sure. Thank you for another fabulous recipe, very much appreciated!

Freezing food can make the cell walls break down, releasing moisture. This could explain why your roti's were easier to cook after being frozen. A good example of the cells breaking is when tofu is frozen and defrosted... it releases a lot of moisture and can then reabsorb flavour - more effective than pressing tofu.

I watched a video with nearly this same exact recipe and they were calling it a tortilla and they used a home tortilla press to flatten it and get it thin. They then made chicken enchiladas with them and it looked super good.

Hello! I was wondering if you thought these rotis would be strong/elastic enough to turn into paratha (not stuffed but the flakey roti)? So brush the circulsr uncooked roti with ghee, roll up, coil into snake, and roll out into circle again kind of thing. Thanks!

Jennifer I tried making flakey roti. I tried binding the dough with different amounts of psyllium husk and mozzarella cheese as well. Sorry it did not turn out layered and flakey. I wish it did :(

You can try using egg to bind the dough instead. I stored them in a freezer (uncooked or cooked roti) separated by parchment paper in a zip lock bag

Ketogenic diet allows 20 net carbs per day. Most Almond flour brands have between 10-16 grams of carbs ....if you make 4 out of one cup, one roti can be 2.5 net carbs - 4 net (if you minus the fiber) ..... so this is well within the Keto diet parameters....depending on what you are having it with. If you use bamboo fiber with almond it can reduce the carbs.... But freaking out over 1 carb on keto, you might want to change your diet to carnivore.

@@skinnydee1886 When I tried making it without psyllium husk the rolled out doughs were tearing easily. Maybe using a tortilla press with greased parchment paper on both sides could help. Totally worth a try!

Is it healthy to eat almond in big quantities? As people from south Asian countries always used badam with milk ,desserts not more than handful. Interesting. The substitutes I've found which more-or-less work 1 to 1 with almond flour are: pecan flour, sunflower seed flour, walnut flour.

If you consume almonds and other high-oxalate foods (there are too many from walnuts to raw spinach to daal/lentils) in moderation and stay constantly hydrated, you will be fine. Enjoy keto roti a few times a week and whether you eat it or not, get your H2O as a lack of sufficient water intake concentrates minerals in the urine... a catalyst for kidney stones

Not practical. Almond flour comes in small bags here in UK and it’s soooo expensive. Couldn’t feed two people let alone a family.

I prefer the taste of almond flour roti over coconut flour roti. But when you have coconut flour roti with coconut milk based curries it tastes really good!
